The food looks very good, but it is not food for Christmas.....At Christmas dinner should be a fish -in Latin El PES (like 'pescado'-abbreviated from of the word, still used in Spanish today)....The reason is, that in old Rome, when Christians were persecuted for almost 400 years, to identify themselves to others on street in public etc, they used to draw the picture of the fish (PES), with twig or walking cane,(Romans and all non Christians would not understand it) because it was and still is an abbreviation of "Poder Eternal del Senior , which in English is Eternal Power of the Lord......and Christmas is Lord's birthday!. I am not a religious person, but I like to do things right and with logic, hence pork or anything else, but fish, should not be on Christmas dinner table.....because, after all, even non religious, I belong to Christian culture of my predecessors.......But that is only my opinion...
The Northern latitude had a winter festival long before Christianity stole it for its own purposes, (Jesus wasn't even born in December ) basically they displaced the pagan winter celebrations with their own agenda. The real reason for the Northern latitude having a winter festival is that it gave people hope for living and surviving another year; they used up food that would likely perish and they killed live-stalk that they had insufficient supply's to feed. Its dark up here mid winter, very dark and the further North you go the fewer the daylight hours, so a festival with bonfires and eating gave hope and something to look forward too; you might just last to the spring.
