Hey Aaron loving this recipe i’m attempting to do this on Christmas Day but by gammon joint is only 1.5kg . How long should I boil and roast it for you reckon ?
Thanks Henry! For a 1.5kg.. I would say boil it for around 45mins. It doesn't need to be roasted for a certain amount of time as the gammon is already cooked through from boiling. The oven time is all about the glaze. It will get thicker and more intense with every layer poured over and each flash in the oven. So it's totally up to you but I would say roast for 40mins, taking it out every 10mins to pour over more glaze .. should do the trick 👍🏼 Hope this helps mate and I hope you have a great Christmas!

So your gammon is raw I get from this, but it is brined? How do you know it is too salty upfront?
Correct! As a rule, raw gammon is always too salty and will need to be soaked beforehand, as in this video. A lot of shops will now sell it already cooked (and soaked) so for those you just need to roast and glaze. Hope that helps! Happy cooking.

This recipe is for a raw gammon, but you could use the glaze on a ham for sure! Great idea!
I’m going to make this at Christmas (looks great) but have two queries:
1. The recipe says to use zest and juice of two oranges but, in the video, you use three? Which is the correct measurement?
2. The recipe lists 5 spice but you use nutmeg in the video. Can you use either?
I love the look of the cloves but how do you avoid eating them by accident? Nothing worse than biting into a 100 Kiloton perfume bomb thay destorys yoir pallete when trying to enjoy a nice meal

It will probably just called a ham. You want it cured, uncooked and unsmoked. Ask a butcher near you
