    FRENCH FRIES RECIPE:
    Preparation time: 15 minutes + freezing
    Cooking time: 25 minutes
    Serves: 4
    Ingredients:-
    5-6 Milly Potatoes, peeled
    Salt to taste
    ½ tsp Paprika powder
    ¼ cup Parmesan Cheese
    Process:-
    ● Cut the potatoes in ½ cm thickness and put them in water for 15 minutes.
    ● In a pot, add water and keep it to simmering temperature, i.e, 80-85*C, and par-boil them.
    ● Once done, drain them in a flat tray and spread evenly.
    ● Deep freeze them for 1-1 ½ hour.
    ● Heat oil in a kadhai at 130*C for first frying.
    ● Remove them from freezer and fry them for about 80%.
    ● Once fried, remove them on a paper towel.
    ● Heat oil in a kadhai at 170*C for second frying.
    ● Fry them completely. Remove them on a paper towel.
    ● Transfer hot fries in a mixing bowl, sprinkle some salt and mix well.
    ● Sprinkle paprika powder and garnish with parmesan cheese.
    ● Serve hot.
    NOTE:-
    ● MILLY POTATOES HAVE EXCESS STARCH CONTENT, WHICH MAKES IT CRISPY.
    ● LEAVING THE POTATOES IN THE WATER RELEASES THE STARCH CONTENT.
    ● PARBOILING THEM ON A SIMMERING TEMPERATURE, COOKS IT EVENLY. PARBOIL THEM ABOUT 20%
    ● FREEZING THEM AFTER BOILING MAKES IT CRISPY AND PREVENTS FROM TURNING BLACK.
    ● DOUBLE FRYING MAKES IT CRISPIER.

    Thanks for sharing such a wonderful recipe. I always wanted to know a good french fry recipe and science behind it. I saw your method. I was hooked mostly when you talked about science. But with respect, I didn't get much scientific information about all process. Well, I try my own way to explain.
    My learned method is quite lengthy. but the final result is quite impressive with beautiful texture and crunchiness. Here we go.
    1. First, take 500gm russet potatoes and cut into a 1.5cm thickness( this thickness holds most of the moisture inside potato)
    2. rinse thoroughly all cuts with water to remove surface starch.
    3. Brine with water(500gm) , salt (2% of the total weight of potato) and 1% of baking soda. Baking soda helps to raise the pH level of water and helps to breakdown the pectin in potatoes. Breakdown of pectine is important for the next step called cavitation. Cavitation is a process which creates an empty space in a solid object. Keep this for at least 30 minutes in the refrigerator.
    4. Vacuum seal all the potatoes in even layer with brine water and steam at 90-95 c for 20 minutes.
    5. The par-cooked potatoes are then dropped into an ultrasonic water bath (40 Khz) for 40 minutes on each side. This causes outer surfaces to form micro-faults. The microwave creates a tiny air bubble and blows them up in a surface of the potato. It essentially roughs them up a bit to increase their surface area, which in turn leads to more crunch.( This process can be avoided at home by steaming potatoes once again with the almost done state). It creates the same texture outside but it likes to break. So need to be handled with very carefully.
    Rest the potato chip for dry. We can speed up the process by use of a household fan.
    Then Blench the chips in 162 c oil for 3 minutes. This seals the inside moisture of the potato.
    Cool the chips completely in room temperature.
    Again blench the chips in 190 c oil until the crisp, brown color, about 3 minutes. On contact with the oil, the moisture on the surface of the chip immediately vaporizes, sending out jets of steam that spatter the oil. But due to cavitation, The exterior of the chip mummified into a hard crust. The water vapor that didn't make it to the surface in time to escape is trapped. It steams the potato flesh instead, giving it that fluffy quality that contrasts so nicely to the crunch.

    Hello chef........ As my daughter loves fries I have tried making it almost several times seeing several good channels but always disappointed with the results........ But i tried yours recipe exactly the way you did........ The colour, texture everything was exact but the fries didn't turned crispy........ The M n B restaurants may be adding something else as well......... Never got the results this close from any other recipe.........     Tried this out today and it was perfect. For the first time, my french fries were crispy. It is a no-fail recipe indeed. And yes.Used my new pan from the 'Ranveer Brar collection for Home Centre' for the frying, which made it all the more special💛

      The potato he is using looks little bit red from outside.. Conpared to normal one so you can identify easily..

      Mealy potatoes which the chef is referring to are pahadi aloo. You can ask your vegetable vendor to source it for you. 😊 I haven't seen many vendors selling pahadi aloos where we live.

    Ranvir - putting fries in cold water then boil then in hot water freeze them half fry them and then fry it
    My mom - take potato and just fry them
