KOLKATA STYLE EGG ROLL
Preparation time 10-15 minutes
Cooking time 15 minutes
Serving 2
Ingredients :
For Dough
1 cup Refined flour, मैदे
1 heaped tsp Powdered sugar, पिसी हुई चीनी
¼ tsp Salt, नमक
1 tsp Ghee, घी
Water as required, पानी
1 tsp Oil, तेल
For Fresh Salad
2 medium size Onion, slice, प्याज
2 fresh Green chilli, chopped, हरी मिर्च
Salt to taste, नमक स्वादानुसार
1 tsp Lemon juice, नींबू का रस
1 small Carrot, julienned, गाजर
½ Capsicum, julienned , शिमला मिर्च
2 tsp Vinegar beetroot juice, सिरका चुकंदर का रस
For Sauce
⅓ cup Tomato ketchup, टाॅमेटो केचप
2 tbsp Red chilli sauce, रेड चिली सॉस
1 tsp Chaat masala, चाट मसाला
½ tsp Black pepper powder, काली मिर्च पाउडर
1 heaped tsp Powdered sugar, पिसी हुई चीनी
For Egg
2 whole Egg, अंडे
A pinch of salt, नमक
¼ tsp Green chilli sauce, ग्रीन चिली सॉस
Process
For Dough
In a large bowl, add refined flour, powdered sugar, salt, and ghee.
Add water as required and knead a soft dough.
Now, apply little oil and cover it with a muslin cloth and rest for 15-20 minutes.
For Fresh Salad
In a mixing bowl, add sliced onion, green chilli, salt to taste.
Add lemon juice, carrot, capsicum, vinegar and beetroot juice.
Now, mix everything well and keep it aside for future use.
For Sauce
In a bowl, add tomato ketchup, red chilli sauce, chaat masala, black pepper powder.
Add powdered sugar and mix it well.
Keep it aside for future use.
For Layered Paratha
Divide the well-rested dough into 3 portions and shape each portion into a small dough ball.
Roll the dough into a very thin sheet, almost transparent.
Starting from one edge, make small pleats by folding the rolled dough. Then, swirl the pleat to form a circle like a swiss roll . Make sure to tug in the end neatly.
Shape the rest of the dough balls the same way. Cover and let it rest for 5 to 10 minutes before you roll it for the paratha.
Place a cast iron pan or any heavy bottom skillet at medium heat.
Roll the shaped dough into a thin circle evenly. Roll gently from the center to outward.
Drizzle a little oil to medium hot skillet and place the rolled paratha.
Gently press and keep rotating the paratha on the skillet. Cook for 1 minute, drizzle a little oil on top and flip.
Cook for one minute while gently pressing. Make sure to press the edges as that part takes more time to cook. Flip and cook for a minute. Continue flipping and cooking until you see golden brown spots all over. Take it off the skillet
Whisk one egg in a bowl with a tiny pinch of salt and green chili sauce. Drizzle little oil on the skillet, pour the egg and immediately place the cooked paratha on top of the egg. Gently move it around so that the bottom gets covered in the egg. Cook for a few seconds and carefully flip it around.
Layered the onion fresh salad in the center of the paratha.
Add prepared sauce and roll the paratha tightly.
Wrap it with parchment paper. Make sure to seal the bottom.
Serve immediately.

@@daityaree5230 Generally jinke ghar me Puja hoti he wo nahi khate. Kuch logo jin ke ghar me Puja hoti he wo navami ke din Pashu Bali ke bad mans aur machli khate hain. Basically jab tak Devi Chamunda ko Sandhya Puja me Bali nahi di jati tab tak jinke ke ghar me Puja hoti hai wo non veg nahi khasakte. Jinke ghar me Puja nahi hoti wo khate hain non veg. Zayada tar logon ke ghar me Puja nahi hoti hai kyuki Durga Puja ek mahapuja hain. 1-2 lakh rupees to kharch minimum hote hain.

As an old timer, I remember Egg Rolls being available for 75 paise in 1978 when they first appeared on roadside kiosks in New Alipore.
That’s the difference between a cook and a chef. A chef like Ranveer not just makes delicious food but they also have all the knowledge related to its origin and it’s backstory!!

@@s.s5257 Yeah ....Navarati is a festival which includes many rituals too. But Durga Puja is only a festival....there's no role of us (the common people). The priests are there who actually does the puja...and we people actually go for pandal hopping😂...so yeah this is our durga pujo😇. Now there maybe some ppl who've some rituals to follow in those 4-5 days...but there's no such hard and fast thing for every person.

Actually in some parts of India. कलश स्थापना is done at individuals home as well as in Pandals. and on नवमी (9th day) after serving food (treating them as Maa Durga) to the 9 young girls people start eating the normal food till then vrat wala food. That's y I got confused

You know what ..i belong from bhilai..and for those who first time listen this name, i would like to tell them that this place is known for the largest Railway tracks manufacturer in asia by SAIL..and socities from all over the India, wheather it is ,bangali, tamilians, malyalees,localites, we have observed all the cultures, traditions and cuisine of course..and your recepie bring me back to those pujo stalls were we enjoyed pujo pandaal hopping holding this bangali delicacy in our hand ..thankz for sharing

I went to kolkata recently and it seemed like the soul we are talking about died 20years ago. People I met were the most unhelpful I have ever met. They didn't even wanted me to talk in Hindi even though they completely understood hindi. 1000 non vej eateries just outside temples 🤮, couples kissing openly on the road( not sure if this was the soul). Bengalis were pretending as if kolkata is a different country and I am a foreigner. Bengalis used to be the pioneers in many fields in all parts of world. Now they are confined n isolated in one shitty well called W.B.
