Assalam u alamikum, My dear sister... I want to keep them soft at least 5 hours. But how can i keep them soft? After cooking

You can Refrigerate 2-3 days once they are nice and cool. To serve, sprinkle a little water and heat on a ‘tawa’ or a non stick pan with a lid on top. This should hopefully give you soft roti’s Inshah Allah.
Rice roti/tortilla
Ingredients
3 Cups of boiling water
5 Cups of rice flour
Salt (optional)
Method
Boil water, add salt.
Add rice flour and stir. Keep stirring until dough is crumbly.
Turn down heat and cover. Cook for 4-5 mins.
Add cold water to dough while it is still hot (important) and start kneading. Keep kneading wetting hands as needed until dough comes together.
Proceed as shown in video.

Thank you so much for this tutorial. I tried making this but it was very sticky whilst kneading. Not sure whai did wrong. I followed all the steps. Any suggestions on how to avoid the dough being sticky?
Too much water can make the dough sticky. You can try kneading with a little rice flour sprinkled on top to absorb the moisture.

Thank you. For gluten free samosas you can try ‘rice paper’ sheets available from Asian and or Chinese grocery stores here in the UK. They also sell them on Amazon online!
Can we not use dough head of blender to make dough instead of hands

I use the ‘Natco’ brand which is milled from specially selected rice grains.
Thank you so much for your amazing video. I tried making these a few times but sadly they come out very dry and hard. Any suggestions? Maybe mine are too thin? How thick are yours? Maybe the pan is too hot? What is your heat like? I can't tell from the video. Maybe I cooked them for too long? How long on each side for you? Thank you so much ❤️❤️❤️
1.Try kneading the dough with as much strength until it feels soft in the hand and easy to to roll. 2. Remember to use rice flour instead of plain flour for dipping the dough before you roll into rotis. 3. Finally, the thickness of the rotis is about 3mm and I would heat on a warm (pre-heated) pan on slow to medium flame flipping sides when you see sort of air bubbles(bumps) appear normally within 60 seconds. Once flipped, the Rotis should rise If not try pressing the sides with a clean cloth, spoon or place it under a medium naked flame turning sides quickly with a kitchen tong. Be careful not to rip into the rotis or else it will not rise. Hope this helps feel free to come back if you have any more questions.

Can I make a kathi roll out of it for lunch to take? Will it stay like wheat roti? Or might disintegrate?
Although I have never personally tried it out I don’t see why not especially when the filling is roasted and or dry.
I am currently working on a new video rice flour roti Q & A which hopefully will give you more insight.
Can we keep that dough in refridgerator for next day?
I have personally never needed to refrigerate rice flour dough. It tends to go really hard once cold and May require a lot of kneading for the best results . I prefer to make the roti’s, allow to cool then refrigerate in an air tight container up to 3-5 days. To serve, sprinkle a little water on each side and heat on a tawa or non stick pan covering with a lid until soft.

With this particular recipe there is no need to leave the dough to ‘rest’ or refrigerate.

@@tahuramulla8656 this recipe is traditionally made from fresh and that’s how I do mine. If you choose to refrigerate the dough (48 hours recommended to 3 days max for chapatti dough) may be tougher to roll out the rotis. Would love to know how you get on.

It’s a Insulated food storage hot pot. Keeps the roti’s nice & warm until served and is available in most south Asian shops that sell cookware. You can also buy from Amazon!
Asalaamu’alaikum sister, if you can remember, how many rotis did you make in total with the amount of flour you used?
W/Salam Sis, it was 5 cups of flour (using measuring cup) and from the top of my head about 12 rotis. I hope this helps stay connected.

So I made it but the dough stayed crumby, it was more cookie like texture than roti dough like texture… any ideas why?
When you first take the dough off the stove it is crumbly. Taking time to knead well should bind it together! In the case it is dry, dip your hands in cold water or sprinkle as you knead. For the best results knead when it’s hot/warm.
Can I use brown rice flour?
I don’t see why not.

I have Fibromyalgia and could not stir this dough. You need a lot of strength to do this. Is there an easier way to make this dough?
You can try using a good quality food stand mixer with a dough hook.
