This is going to be my first time making a carrot cake. I'm going to follow this recipe. Are the raisins and nuts optional? I don't remember eating carrot cake with raisins.. Maybe nuts, but I'm not sure.

can I use white sugar instead? or would it not give it the traditional look ?

I guess you can use white sugar and then add some liquid burnt sugar (dark caramel) to the batter, in order to make it look -and taste- more traditional. :)
