@@AlLunacyQing, just did my very first brisket ever. The bark at 225 was amazing. I did over cook it. It was a little dry. My fault. I should have pulled it at 195 not 203. It didn't poke soft in the flat at 195, but it did in the point. Lesson learned. Next time I'll pull it and let the time it rest in the cooler finish up the flat. But the flat did make for good stew.😊 nothing goes to waste. Thanks again for your videos. They help us newbies out.

Do you prefer fat side up or down on your briskets in the woodwind pro?
Fat side down on the second rack with a water pan and fat trimmings directly under the brisket.
was wondering- how do you know when to refill the smoke box and whether to refill with larger wood chunks or smaller wood chips would give more smoke flavor? Also does cooking with the valve open give more smoke flavor, or closed? Thanks!
Closing the valve after it begins smoking will make your wood chunks last longer. Depending on what temp your running will determine how long your chunks will last but average 30-45 mins.

@@KevinTguitar yes. Chips aren't going to last you too long. You're better off with chunks. Apple for chicken and pork, post oak for beef.
