When Broad Beans were in season I bought a load of them to make a Risotto with. Ended up blanching, peeling and freezing them. I think I'm going to use some of them for this. I really don't like the tough, bitter skins of frozen Lima Beans. They're a pain, but they're a lot nicer peeled to me.

In America we don't shuck lima beans, it is not necessary.
It looks like what she has are Fava beans, which are not a common dish in the US.

I think I will try making this for thanksgiving this year; I have never made or tasted Succotash before though. However, where I am from we flip flop from saying Lima beans or butter beans; because out of all the beans we cook: great northern, pinto, black eye peas, cranberry, Octobers, and green beans. Its the only bean I don't cook it with pork only butter.
I don't like slimy okra should i pre roast it, or will this matter after crocking? seems that the slimness is what makes or breaks this meal.

Broad beans and lima beans are slightly different for the record, broad beans are what americans call fava beans. :) Looks like a tasty recipe!

In America, broad beans are called fava beans (not lima beans - which are butter beans). As in silence of the lambs - "some fava beans and a nice Chianti".
Butter beans are white and not green like Lima beans
