Bacon Ranch Cornbread Salad
8.5 oz. pkg. cornbread muffin mix
1 egg
1/3 cup milk
15 oz. drained black beans
30 oz. shoepeg corn
1 pint cherry tomatoes
3 oz. crispy Bacon
1 1/2 cups shredded cheese
1 cup diced onion
1 cup sliced black olives

Yummm... you always come up with so many wonderful things from my childhood when I lived on my grandparents farm , best part of my childhood !! I love yall ...such sweet loving enjoyable couple !! Bless you both & your family !!🙏❤️
In the Tennessee valley where I come from we made something similar and it was called summer dressing.😅 We made at least 2 to 3 pans of it to take to church dinner on the ground/homecoming and it was gone about as fast as you could turn your head. Recipe: a pan of jiffy corn bread crumbled into a bowl, but the only vegetables used were sweet bell pepper & tomatoes & onions chopped. Can put all those in one bowl stir them together if you want to or separate them. The dressing is 2 cups of mayonnaise or miracle whip and 2/3 cup of bread and butter pickle juice. If you want the dressing thicker then you could add another cup of mayonnaise or miracle whip. Some like it thicker some don’t. In a flat container such as a cake pan, layer the cornbread, vegetables, 1/2 of dressing and then make a second layer of cornbread, vegetables, dressing and lastly a few vegetables sprinkled on top of the dressing to make it pretty. For an 8 x 8 or 9 x 9 pan you use one pan of cornbread but for a 9x13 pan you would use 2 boxes/pans of cornbread & some people use 3 boxes/pans of cornbread for a 9 x 13 size. My grandmother made this stuff all summer long and she ate a little bit of it just about every day. It’ll keep for several days covered in the refrigerator. I think it tastes even better after it’s been refrigerated for a few hours before it’s served. It gives the flavors time to marry.
I like good cornbread salad! Used to have a deli near me that had a lady come in and make her recipe. I like pintos and green onions in it ,oh yeah makes your mouth water just talking about it! We had some wildfires in our area,it was smoky for 3 days last week,thankfully we got rain yesterday morning. It turned colder last night and Mr. Brown repeated our temperatures for next week. Looks like Novembers I remember cloudy and cold. A fire in the woodstove sounds good! ❤️Love from KY ☺️!

I love cornbread salad and I’m normally not a sweet cornbread girl but with this I think it’s best for the sweet/salty contrast. I make mine in a 9x13. Great recipe.

I was raised in the South and was raised eating cornbread and I love it but a few years ago I heard about this recipe and thought " I won't be trying that." I thought it sounded horrible and I am not a picky eater. My mama made it for us at Thanksgiving a few years later when she saw the recipe in a cookbook. I was wishing I had tried t sooner. It has been one of my favorite things since I tried it. We always make our own cornbread because we prefer that over jiffy cornbread mix because it has a sweet taste but it is probably good too.

Miss Lori, I make my own cornbread but I used to make corn dogs for the kids with Jiff. It was perfect for that. My cornbread is made according to who is gonna eat it. Some don't like sugar some do. I do. Love you and all your recipes. Love Mr Brown too. Because you are both soooo real.

I've never heard of this before but it looks amazing! I have had a version of this as a 7 layer dip but it didn't have cornbread in it. I have to try this for sure! Thank you for the recipe! By the way, I made the first fire way back on October 23, I'm in Southern Arizona and we've had some pretty cold nights already. I'm hoping that means we will see a lot more snow this year!

Ora Pace, my grandmother wasn’t the cook that you are…but my maternal grandmother from Searcy, was a great cook! The Pace’s were Church of Christ members and the Searcy grands were hard-shell Baptists. I love turning on your videos and watching on tv when I’m getting settled in and relaxing…you’re just the best. I learn a lot from you and could sit in your kitchen and just be. I wish I would seen this when Grandma was still with me. She would of absolutely love this. Thank you for for making my thoughts of her. I made her big veggie plates for lunch. When she was not up to eating she would eat that! So we grew up with corn bread and just beans sometimes. Like family get together dinner. Well Grandma made a big salad too but we loved her beans. Lol so this on a few things brings back memories.
