I used half of the following recipe
8 oz vanilla beans
14 oz white rum (you can use other rums)
20 oz sugar
16 oz water
1/4 cup corn syrup
1 TBSP lime juice
3/4 - 1 1/2 tsp zanthan gum

It’s reallllly handy to have when your beans are busy extracting! I won’t buy store bought vanilla extract anymore, but I don’t have any of my own ready to use yet either. The paste really helps!

In the Indri group they say not to put it in the fridge, have you done in and out of fridge. When i made this recipe, i did not put it in the fridge, the jar (a quart) lasted me almost two months, and i never had a problem.
I’m actually currently testing both methods. Thus far I have had no issues what so ever doing it either way. I’ve read that pros and cons to each, so I decided to test it myself. It’s only been about 6 weeks or so since the start of the experiment.

Me too! I realized that to be fair, I need to let this age for about a month! I’m thinking I should also do one more recipe (one using agave syrup) then taste test all three!

I was under the impression that when you make paste you use and blend the whole bean? And I thought your not suppose to boil it either because you boil out the alcohol and it’s not shelf stable anymore?
Thanks for your comment. There are several different ways to make vanilla paste, in fact I have made videos of four different methods. All have their place. I can assure you that I made this particular paste a year or more ago, and it’s still going strong.

im about to make my 1st ever batch i have to cut the recipe in half tho but once made how do you use the paste is it for same measurement thst a recipe calls for extract? ive never heard of paste until i saw in the indri group thank you !
You can use it to replace vanilla extract in a 1:1 ratio, so it's easy! Good luck! Let me know how it goes! I actually have three different vanilla paste recipes posted. Rebecca, whats the shelf life on homemade vanilla paste, ? And how do you store it,? In the pantry or frig ?
I have stored it both ways. In my experience it lasts well either way. The shelf life seems indefinite. I would probably try to use it up in a couple of years to be safe though.
I bought some Tahitian vanilla beans grade A from Fit N Clean and I made the 3 ingredients recipe. After straining my paste. I taste it and it tasted bitter. Does the paste need to set and for how long?.
Is it normal for vanilla beans to taste bitter?.
I have never had vanilla beans that taste bitter. Paste is best if you let it sit for about a month. Maybe try it again in a month and see if it’s any better.
Can this be made without alcohol using vegetable glycerin?
I'm not sure if you saw my three-ingredient vanilla paste video, but that would be one that I would be very comfortable just omitting the vanilla extract, and there for eliminating any alcohol. here is the link to that video: ua-cam.com/video/xMx8K-0SkBE/v-deo.html
Allow me to make some respectful suggestions regarding the procedure:
1. Start with water and xanthan gum: You should begin with water and xanthan gum instead of alcohol. There are two reasons for this: xanthan gum requires heat to activate, and we don’t want to evaporate the alcohol, which is important for its preservative effect in water-based solutions.
2.Preparation of the sugar syrup:Once the water and xanthan gum are activated, add the sugars and citric acid (or lemon) to form a sugar syrup. Glucose or corn syrup will help slow down the crystallization of sucrose, which is beneficial for the texture of the syrup.
3. Vanilla infusion: Finally, infuse the vanilla pods into the sugar syrup by boiling at least three times. When the temperature of the syrup reaches a maximum of 50°C, add the alcohol.
I really don’t understand the reason for not making a simple vanilla extract (alcohol + vanilla). It doesn’t make much sense to mix it with water and sugars. If the purpose were to create a syrup with sugars, I would omit the alcohol

I definitely do make simple vanilla extract! Loads of it! The paste is a nice option for something quick when you are waiting for your extract to reach full potency!

What can I do with leftover bean pods?
1. If your beans are fresh and have never been extracted before, you can extract them. The rule of thumb is 1oz of beans to 8 oz of 70-100 proof alcohol / 35-50 ABV.
2. You can also, use the beans for a different type of past, I have a couple other recipes posted that use the pod.
3. You can dry out the pods thoroughly and use them for making vanilla salt, sugar or just simple vanilla powder. I have videos in my “everything vanilla” playlist for all of these things.
4. You can pop them in a “mother jar”. Again, I have a video on that as well.
My paste is very thin .Should it be like that ?

Why do you use lime juice?
The lime juice is to help prevent crystallization. My other paste recipes don’t include it though and I haven’t had any problems with them, so I think you could probably safely leave it out. If you haven’t done so yet, check out my comparison video where I compare the first three vanilla paste recipes that I tried!
Would lemon juice work as well?
Pass. There are lots of extra bullshit ingredients. Stick to extracts. It uses 2 ingredients.
Sure, but extract takes around 12 months to make, paste takes a few minutes. I also have a three ingredient paste video. Paste is a great option for those who are just starting to make extract as it gives them something to use right away.
Does the paste need to be refrigerated or can I keep at room temp?
It can be stored at room temp.
