  • You lot have very keen eye-sight and are very observant and often comment on the vanilla that I use in my videos. It got me thinking about vanilla and what's on offer out there vs. what you can make yourself. So I made a video to explain a few things! Hope you enjoy it! x

    A lot of people who make homemade vanilla extract with vodka recommend leaving it to rest for 6 months to 2 years, depending on the amount of beans used. If you do decide to let it sit that long, please make sure all of the beans are covered in the alcohol or glycerin to avoid mold forming. What's great about homemade vanilla extract is that those same beans will continue to release flavors for YEARS. So feel free to let it rest then decant, refilling with alcohol or glycerin over and over for decades! Bear in mind that every time you decant some and refill the Source, you will need to start the waiting period all over again. Vanilla extract made from alcohol, once decanted, can last as long as you want, too. I personally did a 2 cup jar full of vodka with 5 Grade A Madagascar beans, cut in half, letting it rest for 6 months. Then I'm going to decant it into another jar when it's done and use as my supply for the year. Like cinnamon sticks, vanilla beans really are a perpetual extract source. :D

      @@catmom1322 I've also heard of people using spiced rums and loving it :D I have not heard of bourbon yet, but it's nice to hear about it being good! Thanks for sharing that :3

    I wonder if you can educate us on chocolate next! The different kinds of chocolate and their uses, ways to temper chocolate, etc.! It would be super helpful! x

      This is my third video on the making of vanilla extract. The first said not to use it for at least 2 years, the next included a recipe for lemon and orange rind with it and said minimum of 6 months before using, and now this one says a few weeks to 2 months. I wonder if it is like fine wine and only gets better with age.
      Unfortunately I really dislike any background music with instructional videos! I always found it annoying at a dinner party or discussion evening when the host had music playing and we were all trying to talk over it or ignore it. I think I'm just too old.

      @@freudzwetdream Probably not since her resting time is so short. Most people let it rest for anywhere from 6 to 24 months. Her 2 week timeline and probable disposable of the beans afterwards might mean they don't rot. I do agree that she should have mentioned that AND mentioned that vanilla beans are a perpetual extract and that covering them and letting them rest for 6+ months will yield extract for like 20 years..

      It really isn't very informational. It's more like a video about the different types of vanilla flavorings out there than a teaching about how to make it.. I prefer Mary's Nest video about making extracts myself. Much more of a deep dive and she goes over a lot of information that is critical for homemade extracts like covering the beans and how the beans can continue to yield for YEARS..

    The most delicious vanilla I've ever used was made with spiced rum, steeped for 18 months before using. The depth of flavor is amazing. My cakes and frostings were always good, but with the vanilla made with spiced rum....they were taken to another level of deliciousness. Everyone I've given some too, refuse to go back to vodka based vanilla. Try it.

    I've always used Vanilla essence, and it did always tasted fine. But yesterday I got my hands on real vanilla extract (Nielsen-Massey Madagascar vanilla extract).. And now I can't wait to use it!🤩 And oooh the smell...!🥰😍

    I recently started my jar of vanilla extract. I did it like you showed, vanilla beans in vodka, but then i poured some left over, store bought, extract in as well to speed up the process and make it a little more intense

    Wow! Vanilla extract with supercritical fluid extraction (CO2), it's cool, fancy and technological, yay! Mind telling me/us the band? I didn't know it exist. :)

    thank you so much for this video Jemma! I'm italian and vanilla extract is quite impossible to find in my country. watching english/american recipes was sometimes frustrating for the wide use of vanilla extract in them and I was always like *WHY* until you made this video. love uuu

    Excellent video! Vanilla is the BEST flavor! I have a Southern Baking cookbook that suggests making vanilla extract with bourbon and several recipes call for it. I’ve been making vanilla for years, and make it with vodka, and a separate one with bourbon. When I bake, I almost always double the vanilla called for, although modern recipes are calling for larger amounts. Unless you are a super taster, few people are going to taste a 1/2 teaspoon of vanilla!

    Great video! I tried the alcohol version but I did not know about the glycerin. I have some in the house and will try this to give as gifts to my family that do not care for the alcohol version. I so appreciate you sharing your knowledge.

    The only thing it's missing is possibly unique to scandinavia, but it deserves a mention.
    We have something called "Vanilla sugar", which is basically powdered sugar with powdered vanilla in. It's horrible, but it is a thing.

    I'm from Indonesia but finding good quality vanilla extract in supermarkets is very hard here :") Usually one can find the essence instead, whether it's liquid, paste, and even powder (which is more commonly used here). It's kinda ironic that we export vanilla a lot but finding them here is really hard..
    Fortunately, there have been some companies that provide good quality vanilla pods & extracts online, both alcoholic and non-alcoholic!

      I'm guessing it's the demand and supply. It's fairly inexpensive for someone using sterling pound but for us Southeast Asians vanilla extract can be extremely pricey.

    In Denmark we can get the vanilla pods, from Madagaskar mostly, and vanilla sugar. Extract is not common at all. BUT I just got a big bag of vanilla pods and some vanilla paste from mother-in-law in Tahiti, and I have to say that is THE best vanilla I have ever tried. Strong clear flavour, but unfortunately expensive to get my hands on normally.

    I *HAVE* always wondered about what vanilla extract you use! I noticed it was very syrupy.
    I like to make my own vanilla extract using the alcohol method you demonstrated. I’m making a large batch right now to give out for Christmas!

    Thanks for the tips, Jemma! Vanilla pods cost a fortune here in the Philippines and I've seen some that are small, shrunk, and kind of dry unlike the pods you had in the video. Thank you for giving us the tips on what quality pods to use. can't wait to make this in the future when I see good quality vanilla pods.

    Great video Gemma! I have a 6 week old vanilla extract tucked away at the moment. I think I'm going to leave it for another few months to really let it diffuse all the gorgeous vanillay flavour. I have a few beans left over so I might give the glycerine version a try too.

    Hello ! I Come from Reunion Island which is French and near Madagascar and we produce one of the best vanilla. Concerning the beans, it's actually more flavored the drier the bean is. The longest they stay in the trunks, the more it has time to naturally develop its taste. The big squishy beans are actually perfumed and have no taste at all. May be you should try and compare the too and then decide for your self which you prefer. :) Have a nice day !

    didn't know about vanilla with glycerin i will try it. Vainilla in sugar is awesome! i always have a jar in my business, and i use it for baking of for coffee :) quite good actually. thanks Jemma this was a quite useful video

    I love that you mentioned that you can use the husks for things!
    If you're using melted butter or heating milk, you can also pop the husks in for a bit to infuse the vanilla flavour :)

    I live in Sweden and its actually pretty hard sometimes to find vanilla extract but vanilla powder is actually fairly common and cheap, and it works just as the extract and I think you only need half of what the recipe says, so if it's says 1 teaspoon you will only need 1/2 teaspoon :)

    Great video... Thanks... You mention the CO2 infusion method. Did you try using a whipper siphon and whipper gas? I often do that for adding spicy notes to booze, and I was wondering if that would work well?

    Great video and love your video Recently I made some extract using Sri Lanka Vanilla beans. The extract was amazing, the flavor was mix Cocoa scent, a hit of resins and dates. I used them for many recipes. The beans were great, I bought those beans from eBay, (a seller called "purevanillabeans" ). 1Kg for $270 which was so cheap compared to others, but still lot of money. To be honest I used them for many purposes still they were very good and enough for my Christmas recipes as well.

    +CupcakeJemma you are a saint! I was avoiding to eat vanilla flavored food because of the vanilla extract, I don't ingest any alcohol and I was sad because most extracts or essences has a huge amount of alcohol in it. Your alcohol free recipe will help me a lot. Thank you so much!

    I love to use spiced rum and Bourbon. I feel like they make the vanilla more robust and rich vanilla flavor. I love using the spiced rum vanilla for spice cakes or anything pumpkin.

    I actually make vanilla extract from 90% vodka and about 10% bourbon (gives it a nice flavor) as Christmas gifts. Start it in early October and it's ready to go for the holiday!

    I made several extracts as holiday gifts this year. The same technique works with citrus, mint, etc.

      @AK April Would you explain how you would use citrus, say I have Japanese yuzu or keffir lime, and make an extract. Do I put the sliced fruit in vodka in glass containers and let them sit--for how long? Do you have a recipe?

    Hi Jemma, it was really great to meet you and Dane when I visited in July last year.
    I mate of mine is a Michelin star chef (for the last 30 years), and he gave me a very easy Vanilla paste recipe. Of course, you want really good quality beans. You make a simple sugar syrup allow it to cool and then chuck it in the old Magimix with about 12 Vanilla beans. Provcess it into a very very fine paste. This is intense, so you only need a little, and it keeps in a jar in the fridge for months and months. Brill!

    There is a small producer of vanilla in the US called Charles Baldwin and Sons. They have been making vanilla for over 130 years. It’s top shelf. They have all those forms. Been using it for over ten years. Only buy Nielsen Massey if I need Tahitian vanilla for whipped cream.

Please do a follow up vid showing the results of your vanilla bean bottles and make two recipes using each of the vanilla methods you've demonstrated please. But I'd like to know more about this co2 vanilla extract and why it's so clear in colour and consistency. And more about the company behind it. Perhaps show us a tour around their factory if possible. So intriguing. Thanks 😊

    Thanks for the recipes ☺️ I have a bottle glycerine left over and i didn't know what to do with it. So I will make vanilla extract now 😍.

    Absolutely brilliant video! Would love to see more like this with other ingredients. Vanilla is incredible. Muchly underrated ingredient! I've tried some Tahitian Vanilla and it was incredible, bit more expensive but worth it.

    I just looked online, and found vanilla powder! I haven't been able to find this in stores where I live, save for one store that was actually next door to my house. Sadly, they went out of business. I have been missing it. Thank you for reminding me!

    more than 6 months ago i made the one with vodka witch i still haven't used
    i didnt know about using glycerin, im going to try it with that as well,as it seems a little bit thicker than the vodka one
    here in Australia we also have vanilla with the grinder which i love😀
