Chazuke, or more commonly known, Ochazuke, is a common household dish that's not actually all that fancy. Yes, this is a fancy restaurant but they're serving the fancy version. Generally we just pour our green tea over rice ball and dried ochazuke toppings that's similar to furikake, but designed specifically to be re-hydrated by the tea. It's actually a common, cheap, comfy soul food at home.
It's interesting that the name of this is meal is "Ochazuke." When I studied healing in Tenri years ago, the Divine Healing Grant I received via Tenrikyo was called "Ozazuke." I wonder if there is any commonality between these two names.
@@YohielSpeaks There isn’t as far as I’m aware. The “o”in ochazuke is the honorific “o”, like oneesan or onegaishimasu, noting respect. “Cha” is tea, and “zuke” is submerge. So you submerge rice in tea. As for osazuke, the honorific “o” is kept, but the rest is completely different. Specifically, there is seemingly no origin for the term “sazuke” as used in Tenrikyo, and any kanji character associated is different. Like the term “Torah”, it’s probably a Proper Noun of sorts. Nakayama Miki was given the prayer from God after all. Japanese only has so many sounds. Therefore, words are repeated, but can have vastly different meaning. For example, the term “kami” can mean god, paper, or hair. It depends on the kanji used and how it’s pronounced. Given that Tenri came to be in the 19th Century, while ochazuke’s been a thing since the Heian (though tea wasn’t used until the Edo Period), maybe there was a name inspiration, but there’s no evidence for it.

Wasn't Chazuke what hosts and hostesses served when they want you to leave? Kind of like saying, "This is the last food we will serve you. After that you must go."
I believe it's because it's just tea and rice, one would only serve it to a guest as a last resort when there is nothing else to offer. Offering it to your guest means you're out of food and they have outstayed their welcome.
I made chazuke at home once. It was surprisingly tasty and gentle indeed, the kind of dish that makes you sit down and appreciate how the wind plays with your blinds n stuff Then I got made fun of for eating rice with tea by my colleagues
Chazuke is one of my favorite and easiest homemeals. Just get some rice, some veggies (I usually use scallions and green asparagus or broccoli), some meat or fish cut into strips (cooked) and some unsweetened tea or dashi. I make mine with dashi and it's SO GOOD. Warm and flavorful, you can add a dash of soy sauce and sesame oil if you want too.
My mom and grandmother used to make something like this (the chazuke) when I was a kid before I would go to school, but never knew what it was called. It is yummy.
They also sell instant ochazuke over there. Just put the toppings over rice and pour hot water on it. Mixed in with the toppings are these little, I guess you can call them "brothy tea bits", like bouillon granules but more herby and a little bigger (at least the one I had). Once they mix with the hot water, you get a lovely broth.
