    I was gutted that I had ruined my first ever attempt at mayonnaise, using expensive avocado oil I didnt want to waste it, but I found this video and now its perfect! thank you sooo much!

      I was also making avocado oil mayo and botched it big time. I didn't want to waste an egg yolk and found this video. I love how Chef Rogers broke the mayo and fixed it all in real time, right before our eyes. Great magic trick! I'm glad I broke the mayo, because now it has a smoother creamier texture. Whoo Hoo!

    somehow i mostly saw people suggesting the other way around - adding water into the scuffed mayo and it never worked for me, praise this video, cause your way worked 🙏

    Thanks so much. This worked great and I didn't waste a single ingredient! I was making mayo for the first time in the blender. So I poured it out, added a little bit of water to the bowl and tiny bits of the mixture and mixed as you said, then poured it back into the blender and added the rest super slowly. Shocked how well it worked!

      kberken I threw 2 batches away because I broke them . I felt so defeated... now I wish I would have let them... I’ll try again tomorrow

    Thank you so much. I threw out one batch and when the second batch didn't work, I said there must be a fix for this. I didn't want to waste another egg and another cup of expensive oil. My mayo is fixed and the texture is great. Thanks!

    IT WORKED LIKE CHARM! I just repaired my mayonnaise a half-hour ago using this water technique after the second attempt with two further egg yolks and a half-teaspoon failed. My takeaways from this tutorial: 1) restart with just a bit of cold water in a clean mixing bowl; 2) use a balloon whisk instead of the electric blender wand; 3) drop the broken mayonnaise into the new bowl one tablespoon at a time and it will will emulsify in seconds and become very smooth and thick.     I was making Mayo in a canister blender , as I have successfully in the past, and added to much oil in. It split and I followed this video and it saved everything! Thanks

    Yes, this worked even after I added a few tbsp of hot water to it in the blender! I can barely move my arm but it worked 🙏

    Thank you, thank you, thank you! When I make mayonnaise by hand it almost always comes together but when I use a stick blender although much faster for me it's very hit or miss. Mostly miss. I hate wasting the oil but until now I've never succeeded in saving one and would wind up just starting over. This worked! Within a couple minutes with nothing more than a splash of water added to it it had come together! I am a happy camper.

    I fucked up my mayo today at work lol ,hope this is going to work tomorrow because i was planning to start all over again using extra igridients, never crossed my mind that water would fix the emulsion, great knowledge, nice video and easy to adapt 🥦👍🥦

    i was thinking too mush heat during mixing cooked the egg which broke the mayonnaise. i added one more egg and yet it didnt work. after watching your tutorial i was really happy with resluts. thanks a lot.

      If you are fixing a Mayonnaise you want the water to be cold, if fixing a Hollandaise, you want the water to be warm/hot.

    Of late my mayonnaise breaks. This time i did not throw away but kept in the freezer to see if i can get tips to restore it. I shall bring it to room temperature and like you said would repair it. Hope it works for me. Once it works i will post again. Thanks a lot.

    Thank you Chef, I always added another egg yoke when it broke this will work out great for me now. I have a question for you... the rubber bowl holder your using in the video I have never seen one like that before. I always use a wet towel rolled up! can you please elaborate on the item please.       Yea man same here. Extra yolk to save it works. It splits because basically the fat is too much thus you need something to bind this fat!

    Instead of egg I did one thing took the mayonnaise(broken) and then took some oil added and whisked using a mini hand blender took a spoon and which came up the bubbles carefully took it and transfered to a glass continued this proceddure and got a creamy texture mayo 😊

    I normally would use a wet towel underneath my bowl (when I don't have an extra set of hands available which is most of the time) to keep it in place while I whisk my mayonnaise. What is the cylinder tool used in your video underneath the bowl? Thank you for this demonstration.

    Thank you for the tips chef. i followed and my mayo emulsified (had an even creamy color), however the consistency maintain as very liquid... I tried adding more oil but it doesnt help... Currently keeping the solution inside fridge until i find a solution (help :') )

    I usually just put it in the dridge for a day or 2 and then blend it with a hand blender and my mayo is rescued 👍🏽

    Good day i tried making my own mayo using a blender.. but mine end up being too runny more like a pancake batter.. do i do the same thing

      Hi there. Make sure to put the blender in low speed, if you had vinegar or lemon to it just use a little and you can always had more at the end. You can also try by hand it work mush better for small amount.

    I would just like to say this accidentally happened to me and I tried exactly what you said and it worked...but then I made the stupidity of wanting it to be a little thicker and my arm was tired so I put it on the vitamix on low speed just for a moment and it broke it back down 😓 I am curious why it broke down so simply within a few seconds.... I was hoping it was just going to thicken it up a little more...that's how are usually make my mayonnaise is with the small 8 ounce containers and add oil slow on the vitamix comes out good every time except for this last time I was in a rush and thought I would try adding oil big mistake and then like I said I did your method and it saved it but then I stupidly put it on the vitamix and just for a few seconds and it ruined it again 😓 your method did work though I'm just wondering why it broke back down when I tried to thicken it up a little more .. thank you though I will definitely keep this in the back of my head if I ever mess up me again
