The easiest way to make mayonnaise is with a blender. But a hand whipped mayo is almost as easy, and it's a good technique to know. It is also easy to use hand-whipping technique in a stand mixer, and that is actually just as easy as blender mayonnaise. For large portions, it is actually easier. I also show how to save his mayonnaise if it becomes separated.

    1 egg yolk
    ½ to 1 tsp mustard
    1/4 tsp salt
½ to 1 tsp lemon juice or good vinegar
1½-3 dl (approx. 1 cup) oil
    pepper to taste

Hi, thank you for listing the ingredients. I think he said tablespoon for the lemon juice? Do you know what kind of oil to use? It wasn’t mentioned. Thank you

@@lourdesyager5521 never use just olive oil, if you want to add olive oil add a little because it will literally burn. The best tasting oil in my opinion is canola oil.

I used a blender to make mayo... It broke and I foolishly tried adding another egg... didnt work. Then I tried hand whisking an egg and tried adding the broken mayo little by little as shown in this vidieo, and it didnt work as well. Now I have a thin liquid dip/sauce made of 1cup oil and 3 eggs :( sad

The best way to rescue separate mayo is to not make it until you have a stick blender.

Do the eggs have to be room temp on both the 1st successful attempt & also when saving the runny mess? I had a mayo fail last night using an emmulsion blender bc my eggs were right from the fridge so I chunked my runny mess into the fridge & ent to bed. Would love to save it but wondering what temp the mess needs to be when I retry. Thank you!

+Kvalifood, Thank you. I use the immersion blender in a 2 1/2 cup mason jar which I though was big enough but I didn't allow for the size of the blender taking up room too practically squeezing the mixture over the top of jar. So I dumped my failure out into a bowl and tried to blend it there. No such luck. So I did like you and dropped a yoke in the jar, added some of my watered down mayonnaise and started the blender again by pulsing it. YES, it worked! So I continued to add my failure filling the jar up as far as I dare while blending continuously. I only had to throw out about a half cup. So regardless of what type of method is used to beat the mayo, adding the failed mayonnaise to the yoke really did the trick. I have nice thick mayonnaise now. And wow, is it good. THANK YOU, THANK, YOU, THANK YOU. I will be making changes to my mayonnaise recipe so I will have room for my blender because the size jars I bought, are the limit I can go because of my blender.

Do you have to add mustard?

    • @Kvalifood
      @Kvalifood  6 років тому +3

No, but It does help with stiffening the mayo. I would recommend adding just a little instead of skipping it entirely. There is not much else to flavour the mayo, and in small amounts it does not taste like mustard.

At home and watching my football team. The game got me so intense I needed to get up and do something - anything...,
my poor judgement try to whisk mayonnaise.
Somehow I managed to produce ~65ml creamy emulsion.
But my team falling apart even worse..., anger, frustration, despair, so of course added too much angry Lemon. So mayo emulsion broke to lousy soup.
Big time release of foul language and toss into the sink?
Nah, just throw it into the fridge for later - watch your Vid and fix it next day.
Moral to story...? Maybe only attempt mayonnaise, whisking patiently, emoting something sublime..., maybe Celine Dion "Love Doesn't Ask Why"

well someone learned to thin down thick mayo but using the right blender in the first place would have prevented the mayo from needing to be saved. But it's nice to know that we don't have to make a lot of mayo from the get go. This way we don't have to go out an buy expensive oils to make a sandwich. Thank you
