THE REASON IT WORKS is because of the lecithin in the EGG yolk, nothing more, the lecithin in the egg helps it mix slower to emulsify. AGAIN NO OIL, where do you get oil from? hmm all is well.

Thank you for posting this fix. I needed this. When I make mayo, I always have to follow strict instructions because any little deviation I make and the mayo is ruined. Many times I run into this problem, the mayo does not thickened.

This was absolutely brilliant! We used Himalayan salt & it was a touch too salty so we will use 1/4 tsp next time. All salts are different though, so choose wisely. Thank you so much for this. You have saved us a ton of mayo money & also we can make it organic now really cheaply! We used organic, fresh, room temp eggs.

I have made enough flops to learn something.😀 I'm using a stick blender. The egg yolk and the oil must both be room temperature, maybe a little warmer. I tried again but now making sure temperatures were room like and the same for the oil and the egg with a new yolk and a little new oil, about 150ml. It became mayo without problem. Then I added the flop in slowly in the same mix until all was mayo. Remember the flop is a blend of egg and oil, thus plenty of lecithin (The emulsifying agent) in the blend, so it all emulsifies in the end. I also tried an egg yolk in the bottom of the flop blend and that also worked. Temperature seems to be very important. I also add some dry mustard for the taste. Mustard also contains lecithin as I understand thus add to the emulsification process. I also whisk in about 30 percent plain yoghurt (Probiotics) afterwards and leave it out at room temp. for about 6 hours. Then to the fridge. After 3 weeks the mix were still good.

Dear Fabio, I don't throw away my experiment because I use almost everything in the mayo, organic, and I say to myself, "you have to eat your mistake" I put in the fridge and eventually it hardens with the cold, and I use it, but your line is hilarious !!

I don't have an immersion blender, but I was able to fix a broken mayo with a normal blender. It wasn't a homemade mayo, so I just added a spoonful of store bought mayo to a blender and poured small amounts of my broken mayo and blended it until it reemulsified, then added more and repeated until I fixed all my mayo. It was _way_ more work than using an immersion blender, especially because it was one of those small smoothie blenders where you had to screw it on to the container, so every time I wanted to add more I had to take it apart and unscrew it every time I wanted to add more, then put it back together. Just use an immersion blender, lol

My mayo had turned out fine until today. Last time I made mayo, when I was putting away my stick blender, I accidentally hit the speed I had it set at. I set it back at the highest and I think that is the exact same problem I had the one other time that my mayo broke. I'm thinking that setting the speed to high mixes the ingredients quicker than is needed and the mayo breaks instantly.
@@AngieInNC I was thinking the same thing. My old immersion blender had only one speed and I made perfect mayo every time. My new blender has variable speeds and Im having a hard time finding that sweet spot. It's also too heavy for my old hands. Homemade mayo is so much better than store-bought so I'll keep experimenting.

@@redhousepress Since trying to find the speed (where it was the time before) I've had 2 fails. I fixed the 2nd broken batch by placing a whole egg, squirt of mustard and a splash of vinegar in a clean jar and adding only half the broken mixture then using the lowest setting, I had to use this trick this twice, since I only used half....but it worked. Last time I tried to fix my failed mayo I mixed the water vinegar, egg and the whole broken batch ( I always make 2 cups) and 5 eggs later (of having to try over and over again).... it was still watery.... I ended up using it in a ranch dressing.

I have used this method before to fix broken mayo and it worked. This time, my daughter went to make the mayo (not following the directions I was giving her), and I tried this method and it did not work. 3 egg yolks later it still did not work. I guess we're having watery, broken mayonnaise in our tuna. :(
Add 1 tablespoon of vinegar and 1 of lemon juice 😉 and you will fix it

I think the mayonnaisa gets crazy because there is not enough liquid in the egg so that’s why it’s will be ok after adding a little bit of extra liquids (water, vinegar, mustard or garlic paste....)

I have failed so many times with a stick bender and jar I have returned to doing it with a hand whisk in a bowl with my mother pouring in the oil.
Top tips: to make the mayo white like Hellmann's add a little water when all the oil has homogenised. Use sunflower oil if you want it to taste like Hellmann's too.
