I lived in Japan before Toyosu was finished, but I worked in some smaller fish markets and the big ones are VERY exclusive even just in terms of who they hire, let alone who actually gets to shop or auction in their wholesale markets. I'm sure they still have shops for consumers, just like Tsukiji, but I can't say I'm surprised at the amount of security present.
Thats cool to learn! It makes me actually appreciate more where certain food grade levels may come from, & how much security & sanitation really goes into the buildings such fresh protein is held! I live in the U.S. landlocked - so fresh fish is difficult to come by regularly for me, or it is Top Dollar 😂worth it when I can! So I have to appreciate these foods from places I cannot get them 😅Everything is either ultra processed or frozen where I am. We do vacations for the freshest foods but that’s my best bet, truly!
