    I didn't have a non-stick pan so I used the cast iron pan....NEVER AGAIN! For all those reading my post, please don't make the same mistake I did. Trying with a cast iron pan is a waste of time, sweat, food and tears. I will stick to using the chickpea flour for vegan omelettes, which somehow work, until I get a non-stick to try this scramble!
    Mistakes aside, I love this channel. I tried at least 6 other recipes and they were always a success among guests. I will ask my boyfriend to get me the e-book for my birthday! Keep up the good work! And the Italian accent hahaha

    YES! I'm always looking for egg substitutes, I miss scrambled eggs! I feel like whenever I make them vegan they're kinda bland, but these look absolutely delicious! thanks for sharing

      It makes like a cheddar-style cheese.
      I mix the following:
      1/2 cup chickpea flour
      1 cup water
      2 tbs nutritional yeast or 1 tbs miso paste (optional, just boosts the cheesiness)
      1 clove of garlic
      1/2 tsp garlic salt
      1/2 tsp onion powder
      2 tsp acid (lemon juice or vinegar, I switch it up)
      1 tsp mustard
      - Then any spices you want. I like to make mine a nacho cheese so I add a 1/2 tsp of smoked paprika, some cumin, some jarred jalapenos, but I've also left it plain to make a more neutral cheese for a pizza and it was still good.
      - Then, over medium heat, pour the mixture into a pot and stir frequently. It'll turn chunky first, then it'll turn smooth and thick. Just keep stirring it. It should cook over medium heat for 7-8 minutes to make sure the chickpea flour gets cooked otherwise it will sort of taste bitter but I havent had a problem with that yet. If you want to cook it for longer, just add a splash more water.
      - You can use it hot as a cheese sauce (Delicious drizzled over oil-free baked potato wedges then topped with green onions and tomatoes, or poured onto pasta for mac and cheese), or you can pour it into a greased container and let it set in the fridge. For me, the consistency normally ends up something close to cream cheese - it works great for grilled cheese sandwiches, quesadillas, spread onto crackers or toast, onto a pizza crust then baked.

      depends on how much pancakey or eggy your omelette is supposed to be. I can imagine it quite good, I can also imagine a sticky, raw desaster. Maybe just try it? worth it, I guess

    i use the same ingredients but i make soft tofu from the chickpea flour, set in the fridge, then scramble with nutritional yeast and soy sauce. makes really soft moist scrambled 'eggs'

    excellent! I just gave this a try but I added shopped onions and tomatoes, some sweet corn and ground pepper, salt. it taste very good and is even cheaper than the veganegg product.

      I haven't tried this recipe but similar recipes and its really delicious, I dont't remember how egg taste so cant really compare it :)

    Mine didn't become curds until i took it off the heat. I think i may have added too much water. Still, i mixed it with grits and violife cheddar. Delicious!! Reminds me of my favorite breakfast growing up.

    My boyfriend and I cooked this recipe together yesterday and we really liked it. I served the chickpea scramble with tomatoes, leek and sweet potato on the side. The ballarini pan works great, I can't wait to try the crepes! Now back to studying chemistry :P

    Absolutely delicious! I put tomato in mine. I make an quiche using similar ingredients and lots of browned off veggies but I put some nutritional yeast in the mix. It's very yummy! So glad your back!

    Eggs were the hardest to give up when I was transitioning to become vegan. So happy I found this recipe so I don't have to buy vegan eggs at the store! FYI this was delicious!! Better tasting than real eggs!

    I tried this recipe today...it took longer than expected for the 'curdles' separate/break up....anyway, it was pretty good..but I'm wondering if there would be any way to make them 'fluffier', maybe by adding chick pea liquid like someone suggested below to replace egg whites...I will try it, but was just wondering if anyone has 'altered' this recipe in attempts to make it lighter. Though it looked like eggs, sorta tasted like eggs, it still has the consistency of dough....any thoughts??

      I tried their cooking method with this recipe and it turned out nice and fluffy, give these additions a try
      1/3 cup chickpea flour
      1 Tbsp. ground flax
      1 Tbsp. nutritional yeast
      1/2 tsp. sugar
      1/4 tsp. salt
      2/3 cups water

      you can buy chickpea flour, it goes by besan flour and gram flour. more grocery stores are carrying it but you can always find it at an indian store.

      Serious Superfoods well first you have to clean it if it still has the thorns after you just chopped them up saute them with onions, tomatoes or red bell peppers i used red bell peppers because cactus have some acid so i 86 the tomatoes but i saute them with green onions or whichever onions you prefer with mushrooms i used one whole container then i added smoked paprika and Mrs Dash garlic and herb seasoning without salt since the daiya cheese is salty. so i just saute those veggies very good in a separate pan then i just combined with the chickpeas scrambled eggs added more paprika love paprika added the cheese combined well and serve it was delicious like a denver scrambled but with the cactus it had a mexican twist oh and topped with avocado and cilantro 😊

      Jude Mihalich you can boil it but i like it like that i think it taste better honestly my mom would always boil it and i wouldn't want to eat it so i as i got older i started preparing it for myself and i would just clean it really good and chop it into pieces and saute it with choice of veggies and spices it's really good 😊

    I just made these and incorporated tomatoes, mushroom, shallots, parsley in them. Also added some coconut milk for extra creaminess. Simply awesome

    Dude! This is awesome! I hope this will taste good because I miss eggs and I'm not really a big fan of tofu scramble. No matter how much I try to adjust the recipe for tofu scramble, I end up not really enjoying it as much as I would like to. Cheers! :-)

      Did you try it? I'm cooking it on a really low temperature and can't get it to cook through. Parts are getting overcooked while the remainder of the scrambles are goopy.

      Corinna Henderson - The same thing happened to me too, unfortunately. Now I don’t mind scrambled tofu as much because I started using black salt, but I rarely make it anymore. Now I just eat avocado toast with black salt because it tastes like eggs to me.
