    When I do my cauli & almond flour grits, I add just a tiny bit of Amoretti sweet corn extract. Really takes it up a notch!

      That was just what I was going to ask him if the corn extract would help it taste more like grits. Love my Wes. Wish he would sing again he has such a wonderful voice. His show on the food network could be Wes Shoemaker the singing Keto chef.

    I loved the taste of Keto Focus's Grits. That being said, I am not crazy of the texture. I got to thinking, my mom would soak fresh beans overnight. Lupin is a bean. I soaked the ground lupin overnight, I drained them and followed the recipe and this is GRITS!

    Oh my, the grits clips from "My Cousin Vinny!" LOL What a great movie. My favorite lines are when New York lawyer Joe Pesci refers to "the Yoots," and the late, great Fred Gwynne as the judge, says "Yoots? What are yoots?" I need to watch it again. Thanks for the reminder!

    The lupin grits are much improved by a longer cook time, I now do mine overnight in my tiny crock pot. They scratch my grits itch for sure, and I have missed grits so much!

    There is another UA-camr, I Don't Sugar Coat who has a lot of Lupin based recipes. She makes a 'grit' recipe using ground lupin and simmers it for about 50 min, it makes a difference!

    Oh Wes, lol, I am a Northern girl and one of my favorite breakfast foods growing up was Cream of Wheat (made with milk and a splash of vanilla). Well, the first time I went south I found grits at a breakfast buffet. Hmmmm, looked like Cream of Wheat to me so I took some and added milk and sugar. It was coarser than CofW but tasted just as yummy. I since have come to love grits with cheese and I especially love Shrimp and grits. I do have your cookbook and look forward to trying your recipe!!!

    i use to make a big pot of grits take a bowl out for i meal and the rest goes into a meatloaf glass pan and into the fridge. the next day i slice it and fry it in butter and then eat that with syrup.

    Thanks for the salt, pepper and butter shout out. Everyone says, "huh?" When I tell them how I like my grits. Granny & Papaw taught me, no sugar in my grits. It's not keto but Picante sauce is good in them too. I've done cheesey grits with shrimp....yummy!

    I've never tried it but, there is a 'corn' extract on Amazon. I wonder if that would help any of these in a teeny amount? PS It always brightens my day exponentially to see your cute little face and videos. Keep 'em coming, my friend!

      It does! For a 12 oz bag of cauli rice & ½ a cup of almond flour's batch worth of grits, I add 1/8th of a tsp of Amoretti sweet corn extract. Also, some cream and some cheese.

      They are VERY smooth - which was nice! I always purchase finely ground almond flour from blanched almonds, but I’m curious how the texture would be with a more roughly-ground almond meal. I may try it and report back!

    I love the cheesy polenta from IBreathImHungry. The recipe calls for parmesan cheese but I've made it with cheddar because nothing is better than cheesy cheddar grits. 😂😊 For those "not southern" peeps, traditional Italian polenta is really just coarsely ground corn grits and traditional southern grits are made from hominy (lye corn). Since corn/hominy are definitely not low carb, you can find a low carb recipe for polenta or grits you like and make it your own depending on the flavors you want. I like adding amoretti corn flavoring to the polenta/grits along with cheese. Who the heck isn't down for some shrimp and grits, polenta with bolognese, grits and red eye gravy. Make my southern heart go pitter pat. ❤️

    Here I am highly skeptical (because my family is from New Orleans and you can’t just substitute whatever for grits) but just watching because it’s you and I enjoy your videos but your face while trying them says it all. Now I’m gonna try these!

      get the corn extract flavoring just a tiny drop goes real far so it lasts, Would give it that great down-home taste.

    I worked at a high-end restaurant in FL & came to LOVE Chef Jason's "Louisiana-Style Grits" recipe~ seriously, some of THE best eating, ever. He never would tell me the entirety of components,~he was kinda selfish that way=)~ but they did have butter roasted baby crawfish/andouille sausage/aged white cheddar(just a little)/black pepper(lots!) and what I believe may have been some dry mustard, fresh thyme & Vidalia onion.
    I have re-created them at home, & gotten pretty close. I love to serve them w/a New York Strip steak & a crispy fried over medium egg- super hot pan, lots of butter & perfect timing on that~ as I'm sure you know.
    *Thanks so much Wes~ I'm excited to try both versions of these, & my husband will be especially thrilled if they work out. He's a big fan of grits, to say the least, & hasn't had them since going low carb.

    Grits were something that I really missed when I went keto. My Dad was from Arkansas and he taught us to mash up our bacon and eggs with our grits. Now I use either riced cauliflower or miracle rice. It's close enough to satisfy my cravings. My favorite meal no matter what meal of the day it is.

    Wesley your video is perfect timing for me. I have been craving grits. I wonder if these would set up in the fridge after cooking. One of my favorite things to do with leftover grits is to refrigerate over night, slice and saute until golden brown.

    I spent a couple of months subbing as director of a day care center years ago and thee cooks would bring me grits and eggs for breakfast. I felt like a queen, they were so good. I have almond flour in my freezer, it is a very good day, thanks, Wes!

    I have tried to cook lupi n beans for chili, because of low net carb counts...honestly, you can cook lupin till the cows come home, and they don't soften. Love you, keep up the great work.

    Another awesome video! Love the fact that both of these recipes doesn’t call for cauliflower. I love cauliflower, but only prepared and cooked a certain way.

    My old school southern fried mama moved in with me in 2020 when all the madness began and thanks to her deep South mostly carb cooking (+ working from home/lockdown/isolation) I gained almost 50lbs in a year! 😩
    Trying to learn/cook keto/low-carb with her has been next to impossible so far, but hopefully a grits option will help.🙏

    You might try putting that lupin flour through a blender beforehand. That ought to be more similar to the fine grain of the almond flour - and so end up smoother like the almond grits.

    I had forgotten the grits bowl I used to make in the winter, this I will have to try this winter. Thank you for comparing the almond flour, your honest reaction was important because I can get almond flour almost anywhere and save the lupin flour for saving on shipping next time I make a online purchase.

    I like a gritty texture to my grits. I make almond milk in my almond cow, dehydrate the pulp and mix it with the regular almond flour. To make "grits". Heaven!

    Grits with cheese and butter and a couple of fried, over medium, eggs. Yum yum. But also, I eat grits and leftover white rice with milk and butter and sugar. Yum too ! Is it any wonder I'm looking at Keto recipes ? Lol

    I've been making the ground lupin beans according to package directions occasionally for about a year now & they are light & fluffy & are a great replacement for couscous... It's also great with anything you spoon over rice. I hadn't thought to experiment with a grits replacement, but will now.

    Glad you mention how dangerous grits can be. When i was 6, my aunt was serving grits to us and as she passed over my hand on the table a drop fell on my hand. I carried the scar for 50 years. At 66 i still can show you a shinny spot where it was. Our family never used milk or cream in grits so not sure if i would like either recipe, but I'm willing to try.

    Your dry pan at the beginning in the almond version made me think that maybe lightly toasting the almond flour before adding the water might give a nuttier flavor to the grits.
    I find just baking up some ricotta cheese works great as a grits substitute. Many recipes on line. Some use egg but it really isn't needed.

    i been using the almond flour recipe after finding it on another channel. (maybe Cindi's) I love em with a couple eggs over easy on top of em, but as you said the only issue is the small portion size

    Though a true southerner, I've never liked grits too much but on occasion I make them, I use butter plus bacon grease

    Since I have almond flour I’m gonna try the almond flour recipe, and I may add a cornbread extract. That might help with the corn taste

    I've made a recipe for paleo "malt-o-meal". Not sure about the nutritional facts towards if its lower carb or not.
    paleo malt o meal
    1/4 cup almond meal
    2 TBsp coconut flour
    2 tsp ground flax seed
    2 TBsp nut butter, I use unsweetened almond butter
    cinnamon to taste
    1/4 cup pumpkin puree (Or I have found that unsweetened apple sauce works awesomely!!)
    Mix together and add 1-1 1/2 cups of hot water stirring till it reaches the consistancy you want.

    Great video and thank you for all you do! The look on your face sold me. :) I feel like each of those are going to taste different in their own way! I can see my using the creamy one has a breakfast with maybe some cinnamon and low carb sweetener (sugar) and the cheesy one with my dinner.

      If you haven't yet, try sweetening this with Bochasweet or allulose. No minty cooling effect like sugar alcohols, or bitter aftertaste like stevia/monkfruit. And Bochasweet is 1:1 with sugar. It goes great on my grapefruit.

    I agree with you on the salt, pepper, butter, and/or cheese! My husband and son add LOTS of sugar and butter🤯 I work at Cracker Barrel and it drives me mad when people order sweets to go in their grits! I’ve heard everything…maple syrup, grape jelly, chocolate syrup (from the sundaes), the apple dumpling topping🧐, flavored tea syrup, molasses, everything!
    In my opinion if ya wanna make em sweet then why not just make cream of wheat?!

    I love grits!!!! especially garlic-cheese-shrimp grits or bacon, cheese, green chili grits! I will NEVER give up REAL grits…can’t do it

    I love your work, thank you! I want to try the almond flour version, cauliflower and beans aren’t too good to my tummy. Cheesy (and sweet buttered 😝) grits are the best and I do miss them! I wonder if you could lighten them up with almond milk instead of heavy cream or sub out half?

    Love your videos! I want to say that I love using actual lupin flour for baking, I also make hummus from the whole lupini beans, but I cannot get over the texture of lupin *meal*. I have tried soaking it overnight and then cooking it for 3-4 hours. It DOES NOT get any softer.

    How would the almond grits be with a couple easy over eggs on top? Maybe with some smoked deer sausage for breakfast? Haven’t had grits in a couple years…

      That would be a FANTASTIC breakfast (or a weeknight “breakfast-for-dinner.”) My family is full of hunters, so I love me some good deer sausage!

    Cauliflower "grits" just tastes like cauliflower to me. I've tried toasting chia seeds. Close, but still too watery and too "grassy". I'm walking to the kitchen right now to try the almond recipe. . . . . . Well, those were really good! Did not expect a slightly gritty texture, but it was there. And I put some in the fridge and they reheated really well. I did have to cook them longer than the recipe said to get the right thickness, though.

      Try adding a little Amoretti sweet corn extract (it's expensive but can be used very sparingly!). Like, I use an 1/8th of a tsp. per batch of grits and it's enough.
