- Dahi vada (lentil dumplings) is a popular Indian chaat, prepared by soaking vadas in thick dahi. The hot deep fried vadas are first soaked in water and then transferred to thick beaten yogurt. These are great as a side dish for a formal dinners. lentil dumpling in yougurt sauce
DAHI VADA

Ingredients
1 cup Urad daal
1 tbsp cumin
5 leaf curry leaves
500 ml Dahi (yogurt)
1 bunch Finely chopped coriander leaves
1-2 number green chilies chopped
to taste hing
to fry Oil
2 piece Red chili
1 to taste Salt
Directions
For vada - Clean, wash and soak the dal overnight.
Grind it into smooth paste.
Add salt to taste.
Heat oil in a pan and drop a spoonfuls of batter and fry till golden brown as shown.
Take the hot vadas and put in cold water for 2-3 minutes.
Now Take them out of water and squeeze the water and keep aside.
For Dahi -add cumin , gr chilli,coriander leaves
blend and add to yogurt and season
Serving - In a deep dish arrange wada and pour dahi over them.
Garnish with tempering as shown
Serve the dahi vadas chilled.

Please clear me one thing whether I need to make very fine paste of the urad dal batter or coarse paste of the batter with almost no water? I want very spongy vada
And also in case of medu vada whether I need to make very fine paste with little water or no water of the urad dal batter or coarse paste of the batter with almost no water?
Please please reply.. I am so much confused whether coarse paste or smooth fine paste will give the spongy texture that we get in cake. Also do we need to add soda biocarb in it??

Chef - we take either fresh yogurt or add a little sugar in yogurt preparation. For garnishing we sprinkle red chilly powder on top. The sweet & spicy combination comes out very well

Not everyone uses turmeric. most of us in andhra dont use turmeric in dahivada. Ofcourse its a simple matter of colour as it doesnt alter the taste.
