I love microwave recipes. My sister makes a peanut brittle in the microwave. Here’s the recipe:
MICROWAVE PEANUT BRITTLE
1 CUP RAW PEANUTS (if using roasted peanuts, add after syrup is cooked)
1 CUP SUGAR
½ CUP WHITE CORN SYRUP
1 TEASPOON BUTTER
1/8 TEASPOON SALT
1 TEASPOON VANILLA
1 TEASPOON BAKING SODA
STIR TOGETHER PEANUTS, SUGAR, SYRUP, AND SALT IN 1 ½ QUART GLASS DISH. MICROWAVE ON HIGH 7 TO 8 MINUTES, STIRRING WELL AFTER 4 MINUTES.
ADD BUTTER AND VANILLA AND MICROWAVE 1 TO 2 MINUTES UNTIL PEANUTS ARE BROWN AND SYRUP VERY HOT. ADD BAKING SODA AND STIR.
POUR ON TO PARCHMENT COVERED COOKIE SHEET AND COOL. BREAK INTO PIECES. STORE IN AIRTIGHT CONTAINER.
I have never made peanut brittle, but I LOVE it. I'll have to try this recipe. Thanks!

Julie, I’m not exaggerating to you when I tell you that you have changed our family’s life. We ate out all of the time. I thought cooking had to be complicated.

My mom and I always made cookies similar to the thumbprint peppermint cookies. We called them Peanut Blossoms, they are just peanut butter cookies with a chocolate kiss on top.

We just made the white chocolate dipped brownie cookies. They were DELICIOUS! They took 13 mins in my oven. My husband melted white choc wafers too long (2 mins they were starting to cook and there’s no going back). Luckily I had saved 1/3 of the pack so we melted those for 50 seconds in the microwave.

I just made the thumbprint peppermint cookies, but with peppermint bark instead of Hershey. Very very delicious and unbelievably easy to make. The cleanup was just a few minutes, and the recipe itself was easy enough almost anyone could do it. I hope my teachers love these. Thank you! :)

I saw your hot chocolate cookie recipe from last year and I noticed the peppermint white chocolate cookies from this year. I’m totally going to use the chocolate cake mix base to make the hot chocolate cookies.
