Sourdough Buttermilk Scones - The best of two worlds!

  • These sourdough buttermilk scones are fluffy inside and crispy outside. Best of both worlds with sourdough and buttermilk in this recipe. The best I’ve ever tasted. My family loves it!
    Sourdough Buttermilk Scones Recipe:
    Ingredients:
    354g All Purpose Flour
    2 teaspoons Baking Powder
    1 teaspoon Baking Soda
    1 teaspoon Salt
    1 teaspoon Sugar
    200g Butter or Margarine (cold - cut into cubes)
    110g Sourdough Starter Discard (Cold)
    160g Buttermilk (Cold)
    1 Egg (whisked)
    1 teaspoon Vanilla
    2 tablespoons Butter (melted for brushing)
    Instructions:
    1. Switch the oven on at 180ºC.
    2. In your food processor, (or in a large bowl), add the flour, baking powder, baking soda, salt and sugar. Give it a quick mix.
    3. Cut the cold butter cubes into the dry ingredients. Not too much, you want it to be like bread crumbs.
    4. Add the sourdough discard, buttermilk, egg and vanilla and mix until just incorporated. Do not overmix.
    5. Turn the dough out onto your clean work surface and shape the dough into a round disk approximately 2 or 3cm thick.
    6. Using an 8 - 10cm cookie cutter (or a cup) and cut out your scones.
    7. Pack the scones onto your baking sheet. I use spray and cook to avoid the scones from sticking.
    8. Brush the scones with melted butter.
    9. Put the baking sheet in the fridge to keep the scones cold while the oven warms up.
    10. Bake the scones for 20 minutes or until golden brown.
