Orange & Cardamom Cake for a very special birthday!

  • I wanted to try something special for my mother-in-law’s 70th birthday, so I made this Orange & Cardamom cake. Everyone loved it!
    Follow me through baking, icing and decorating this special cake.

    Orange & Cardamom Cake Recipe
    Ingredients:
    Cake Batter
    306g Cake Flour
    2 teaspoons Baking Powder
    1 teaspoon Ground Cardamom
    ½ teaspoon Ground Cinnamon
    ½ teaspoon Salt
    227g Butter or Margarine (Melted)
    200g Granulated Sugar
    110g Light Brown Sugar
    3 large Eggs (room temperature)
    2 teaspoons Vanilla
    1 tablespoon Orange Zest
    82g Orange Juice
    163g Buttermilk
    This batter is enough for three 15cm (6”) or two 20cm (8”) pans.
    Buttercream Icing
    1 cup Butter or Margarine
    4 cups Icing Sugar
    ½ teaspoon Rosewater
    ½ teaspoon Vanilla
    3-4 tablespoons Milk
    A few drops of pink food colouring (if you prefer)
    A pinch of salt
    Bake the cake layers the night before and store in the freezer. Icing them is a breeze when they are frozen.
    Instructions:
    Cake:
    1. Switch the oven on at 180ºC and spray your pans.
    2. Whisk the cake flour, baking powder, cardamom, cinnamon and salt together in a large bowl.
    3. In a separate bowl, whisk the butter, sugar, brown sugar, eggs, vanilla and orange zest together until combined.
    4. Stir in half of the flour mixture. Then stir in the orange juice and buttermilk, and then the rest of the flour mixture. (The mixture is thin).
    5. Divide the mixture into you cake pans.
    6. Bake for 20-25 minutes or until a cake tester comes out clean.
    7. Remove from the pans and let the cakes cool down on cooling racks.
    8. Once the cakes are fully cooled, wrap them in clingwrap and store in the freezer overnight.
    Buttercream Icing:
    1. In a large bowl, cream the butter and icing sugar until smooth.
    2. Add rosewater, vanilla, milk, food colour and salt until combined.
    3. Beat on high for a few minutes until light and fluffy.
    Decorate your cake and enjoy!
    I’ve used dried orange slices and meringues. But the sky is the limit. Chocolate balls or shavings will also look beautiful on this cake with the orange slices.
