It's not due to a temperature difference, though, like the habitable zone around a star, the ambient temperature of space is basically the same in the center of a galaxy as farther out, but instead because of other factors. For example, close to the center of the galaxy you have many more stars and therefore a much greater chance of being relatively close to a star that goes supernova, and supernovas are so powerful they can devastate the atmospheres of planets in other nearby star systems. Meanwhile, life requires heavier elements to work and to be able to form rocky planets. If you're very far away from the center of a galaxy, you'll have less of those heavy elements available, which can reduce the chance of having a habitable planet in the first place. But at the same time, too many heavy material could also be detrimental to forming habitable worlds since it can potentially lead to worlds that tend to be big gas giants like Jupiter. So in summary galaxies do probably have rough habitable zones which are more conducive to life, but it's the availability of material and proximity to potential disasters like supernovas that are the important factors, not the temperature.
The goldilocks zone isn't likely to be be debunked because it doesn't refer to the only places life could exist but instead to the conditions necessary for human (or earth life) to exist. They're more likely to add to it than to debunk it, assuming life can indeed exist or even thrive on non-earth-like worlds 😇
You should know many animals died out from even changes from temperature so its definitely important on far a planet is to the sun. Being too close can kill and too far can also kill but doesn't mean the planet has tp be exactly the same place

I can’t help but question what is really happening with a photon inside the sun when the wave/particle probability of quantum mechanics is applied. I suppose as long as at least one person on earth is aware that the sun is shining the collective photons already on their journey here are in a particle state, but would that still apply on the inside where no one is currently capable of observing?
This is a common misunderstanding of the double slit experiment. Photons are too small to be "seen" or "observed," so when we're "observing" a photon, we actually mean we hit that photon with a laser. There's nothing metaphysical or magical about a person looking at the sun that would change how the photons behave. On the quantum scale, "observing" is not a passive action. It requires physical interaction.

It's also because GRBs are more common in the center of the galaxy. There's more radiation the closer you get to the center.
