  • LEARN HOW TO MAKE AN EASY FRIED RICE WITH LEFTOVER VEGGIES!
    LAY HO MA!! Making fried rice is almost therapeutic - it's easy to put together, delicious to eat, plus it's incredibly flexible with leftover vegetables you may have on hand. Join me in this episode and learn how to cook an easy leftover veggie fried rice recipe using random vegetables I have on hand. Let's begin
    Ingredients:
    1 carrot
    1/4 green bell pepper
    1/4 yellow bell pepper
    1/2 red onion
    2 sticks green onion
    2g Thai basil
    1/2 cup canned baby corn
    1/2 cup firm tofu
    3 tbsp chili oil ( • Most addictive Red Chi... )
    1 1/2 cups leftover rice
    1 1/2 tbsp soy sauce
    Directions:
    1. Dice the carrot, both bell peppers, and red onion
    2. Chop the green onions and baby corn. Remove the leaves of the Thai basil and crumble the tofu into a small bowl
    3. Heat up a nonstick pan to medium heat. Add in the chili oil
    4. Add the red and green onions
    5. Add in and sauté the tofu for about 1min
    6. Add the carrots and bell peppers. Sauté for a couple of minutes
    7. Add the baby corn, leftover rice, and soy sauce. Sauté for 2min
    8. Turn off the heat and add in the Thai basil. Give the pan a stir, plate, and serve!

      Almost always have green onions. We pick them us every time we're at the store. Even if we haven't used any yet. But they always get used.

      Here in Northern Ireland we have a store called lidil they have all ingredients like this very cheap all great tasting it’s my go to store all the time,like baguettes in the store where I work you pay £1.25 for 3 baguettes 🥖,but in lidil you get 4 for 80pence,it’s a good difference when you walk around lidil and ingredients can be less than half price to other stores,like in mine at work it is £1,29 for iceberg lettuce and in lidil it’s 50pence for the same thing,ready cooked microwave rice pouches in my store are nearly £2,00 but in lidil they are 49pence when you add it all up you do save £20,00 I can get a £40,00 shop for £20,00 or a bit less it’s amazing look for a store like that shop around in major supermarkets the prices are going up and up 😃

    My favorite herb is thyme. I usually dry my own and put in a bottle. I also freeze fresh thyme and keep it in the freezer. So I have lots of thyme on my hand.🤣

    Yessir, Wil! Leftover rice is always great to have in the fridge. Sometimes we make extra in the instant pot (equal parts rice and water, 3 mins manual pressure, 9 mins natural release, fluff and enjoy/store when cool). 🤗. Hope all is well up there... warming up a bit this week here in Southern Delaware! Seitan BBQ Friday! 👍

    Since I’m happily home bound I’ve quite enjoyed being able to prepare my own meals for my self and I prefer this vegan lifestyle especially since it doesn’t require me to work out at all. Thank you for sharing.

      Will's chili oil has become one of my favorite condiments too.
      I also enjoy making Sriracha too (can't pronounce it right though). I don't make it too hot, so I can use a ketchup-sized amount.

    In my case, brown basmati or short grains rice with left over veggies. 3 must-have in my fried rice are garlic, ginger and mushrooms 😋

    You might like the Aerogarden.     Looks s appetizing! I would have added tje green onions at the end as I love its taste but it does not matter much.
    I thought first the ingredient would be the chili oil ! Any veggies stir fried in a delicious and flavorful oil is sooo good!!

    May I recommend the never ending green onion. Just use all the onion except a small part with the root portion. I put them in my garden but you can have them remake themselves in a small pot with some soil. Easy.

      I always mean to do this. I must now because buying a bunch of green onions tends to be more than I use and then they wilt. I just need to plant the roots then never buy again!

    Thank you for sharing your tips That Chili oil is a must have ..
    we use it a lot in our family traditional stews
    and soups. Because we hardly ever use Palm Oil for cooking these days .
    Chili oil and Tomatoes paste fry. It adds colour and taste to the dish .

    I ordered my e book, but it keeps giving me reminders, but still no book. Not sure what I'm missing, but will keep trying. One of my favorite foods growing up was "Chinese" food... "fried rice." My mom invented her own style "Chinese" food to make at home, and I'd make the "fried rice." I think it got me started loving this kind of food, so I wasn't all that resistant when faced with looking into a plant based eating plan. So glad I had a positive outlook toward it. I'm healthy... so glad. Thanks for continuing to inspire.

    I had something very similar for lunch just about 5 minutes ago, pull my leftover veggies and rice out but instead of the Smoky chili oil I had homemade Thai peanut sauce that I just drizzled over the top, it was good! Not as good as what you just made!!

    I have been using this chili oil a lot , ever since I made it from your recipe couple of weeks ago. The aroma is amazing. I always try to find an excuse to use this oil :) very little oil is all needed to make any recipe flavorful and delicious....yummmmm
    I am planning to saute just the veggies with the chili oil and soy sauce and use it as a side.
