  • In this episode of Simply Local we felt it was important to share some history and insight on breadfruit with our viewers. We met up with breadfruit expert, Dr. Laura Roberts-Nkrumah of the University Of The West Indies to find out more about this staple in Caribbean cooking. A fruit that is widely considered "a ground provision that grows on a tree".
    Then we head off to the kitchen where Renee makes and tastes Oil Down for the first time in her life!
    We gained a wealth of information from Dr. Roberts-Nkrumah, so much that we couldn't fit all of it into one episode, so we will be sharing clips from the interview over a period of time. Be sure to follow us on our other platforms so you don't miss out.

    I love this channel, and everything that you all do. Not only are you teaching us how to cook certain meals and delicacies, you all are informing and educating us about what we're cooking as well. More importantly (to me) you guys are spreading and being unofficial ambassadors of your country's culture, which I really appreciate. I can't wait to try this recipe for oil down as it looks scrumptious.

    You are very talented! I am an International Executive Chef and I know a gifted person when I see one, and you are definitely Gifted. I tried breadfruit one day. first I roasted it, then made it into chips along with Ackee and Saltfish with Callaloo, and I fell in love with it. Dont be afraid to try something new..you will be suprised at what you can create with new things. Much love and God bless.

    I love this channel so much! You guys make these videos very relatable and easy to follow. I have tried a few recipes from you all and it turned out great! Thankyou for the information provided as well from your interview Rene.This is a cool addition to the series. I would love it if you guys show us how to make a delicious wild meat meal, and perhaps your version of buttered cassava.

    Hey so glad to see your version of oil-down, here in Grenada we do it a little different but I will try yours...we have dumplings in ours and we add a bit of salt-fish and smoke herring for flavor...we blend the coconut with turmeric and curry as well. Feel free to include green bananas and sweet potatoes. The best dashine leaves are the new one that are just forming and we put lots and lots, try it...

      Plzz do so, and don’t eat the oildown in a hotel you would not get the real thing, the best oil down you would get is “fire wood” orrrr if a friend or loved one cooked it for you by their home, trust me!!🇬🇩🇬🇩🇬🇩

    Thanks for sharing! As I cannot get fresh breadfruit or callaloo bush here as we are sub-tropical, I’ll have to substitute with frozen breadfruit and spinach! Best wishes.

    My mom does her oil down completely vegetarian and does stew chicken on the side... it's quite delicious.
    When i make oildown, i cut my bhagi into pieces, it really is a simple and easy dish to prepare

    I love oil down I never made it but after this video I have to go on a breadfruit hunt , in trini it’s in abundance not so much here , my Grenadian friends grandma made it with both pigtail and chicken I never had it with chicken .. but it did taste well ...

    The best oil down is with salt fish bread fruit Green Figs BONNET pepper Shadowbenny Tomatoes Lime Juice Onions Scallion. That is simple oil down don t forget the oil or else you can't call it oil down and you can eat it with a nice big buttery zaboca. That is oil down Simple finger Food.

    I luv breadfruit. I make mines with salt beef. Ppl got really smart now, breadfruit is no longer wasted. Some ppl who sell it not even waiting for it to get full. They're picking it too young and bussing price on yuh. Smh

    As a chef you shouldn't say a food is weird as you did about people putting chicken in oildown...it's simply different. Not everyone eats pork or meat. You should taste the amazing flavour smoked herring gives it.

    I'm one of those people who don't saute the vegetables. And BTW, freshly cooked oil down is not the most flavorful. It has a more flavorful, coconutty taste when you warm it up from the fridge the next day. I like to add turmeric and curry to my oil down. They take it to a whole other level. And here's a secret ingredient not a lot of people know about: add a little bit of sugar to it - not enough to make it taste noticeably sweet, but enough that it's just slightly sweet if you're focusing on what ingredients you're tasting.

    The only addition I like is green fig, but my mother-in-law puts other provisions in, like dasheen and eddoes.

    If you want to remove the salt from the pigtail you do not have to boil it two and three times
    Boil it once and then soak in plain pipe water it is the fastest way to remove the salt but it will still have the flavour of pigtail
    I also use the smoked pigtail to add more flavour

    Your research should have informed you - that's Grenada's national dish...Authentic OilDown is done differently . What makes it authentic is the way the pot is packed! Never stirred , hence the nickname Steamdown!
