Saray Lokumu Turkish Roll without Oven

  • You’re gonna love this light but creamy coconut rollette cake from Turkey!
    Ingredients:
    -1000ml whole milk
    -200g sugar
    -120g all purpose flour
    -150g shredded coconut flakes
    -1tbsp vanilla extract
    -1/4 cup butter
    -1 cup whipped cream
    -1/4 cup walnuts and a few whole for decorating
    In a medium sized pot combine milk, sugar, and flour over low heat until mixture thickens and starts to boil. First bubbles start to form, shut off the heat and remove from stove. Set aside.
    In a standard sized baking ban, spread coconut flakes and form an even layer by tapping down flakes with a spatula.
    Once custard has cooled a bit, add your vanilla and butter- mix to combine.
    Drizzle your custard mixture over your coconut flakes and create an even layer. Refrigerate for 2 hours.
    Once cooled and thickened, layer whipped cream over the cake custard and sprinkle some chopped walnuts on top.
    Cut your cake into 8 pieces and roll each cake into rollettes. Not too right, but make sure to get the coconut flakes all around your cake.
    Garnish with walnut and enjoy!
