Rainbow Pepper Jelly | Easy Canning Recipe | Garden | Jam | Presto Water Bath and Pressure Canner

  • Marie shares today our tasty recipe for pepper jelly, including water bath canning! With three different colors of bell peppers, plus jalapenos, this jelly is beautiful, tangy, and delicious!

    Ingredients:
    5 red bell peppers
    5 yellow bell peppers
    4 green bell peppers
    **You need a total of eight cups chopped bell peppers all together**
    15 jalapeno peppers
    **You need a total of 2 cups chopped jalapenos all together**
    2 1/2 cups apple cider vinegar
    6 tablespoons Ball Real Fruit Low or No Sugar Needed Pectin
    4 cups organic sugar
    2 cups raw honey
    1 teaspoon Redmond's real salt
    Instructions:
    *Chop and deseed all peppers
    *In a large saucepan add peppers, apple cider vinegar and pectin.
    *Bring mixture to a full rolling boil. Boil one minute, stirring consistently.
    *Add sugar and raw honey. Continue to stir and bring back to a hard boil for 3 minutes. Remove from the heat and stir in the salt. If there is any foam you can skim it off now.
    *Prepare 16 half pint jars.
    *Prepare water bath canner or Presto Digital Canner.
    *Fill jars with hot jelly, leaving a 1/4 inch of headspace. Wipe the rims of the jars with vinegar. Screw lids unto the jars and tighten gently.
    *Water bath can for 15 minutes.

    I didn’t make any pepper jam last year since I moved in June. My last jar is in the refrigerator. I’m definitely making it rainbow this year!

    Nice Job!!!! Marie, I am impressed you were able to cut the jalapenos without gloves! My hands burned for days when I tried that.😆. I enjoyed the "silent" process with great music and graphics with the recipe. Nice touch on the presentation at the end. 😋so pretty!

    Absolutely love your channel and love seeing your girls getting involved and also all they can do. One tip, and I learned this from experience, is not to hold the jar your filling over the kettle of product. I was doing this and had a weak jar and the bottom of it broke right off into the kettle. I had to throw it ALL away. Great lesson learned for me for sure.

      It's actually not spicy because we omit the jalapeno seeds. It just has a tiny little bit of kick.

      I didn't learn until I was 74. I'm 78 now and wish I would have started years before! Now I can all year round. When there's no garden, I can meats and soups!

    Great job on making and preserving that delicious looking pepper jelly! ❤️ I love the presentation of your charcuterie board with the adorable pepperoni roses and your pepper jelly!
    One important tip though, please DO NOT tip the jars as you bring them out of the canner, it leads to seal failure. I learned that the hard way.
    It’s natural to want to dump the water off the tops of the jars/lids but please don’t do it. By doing so you are disturbing the contents of the jar and that could allow a fragment of pepper of even some of the jelly to seep onto the rim of the jar since the (vacuum) seal process IS NOT completed until the jars are fully cooled down.
    I would hate to see you go through all that hard work and then have the jars not seal because the contents were disturbed during the removal and cooling process.

    Thank you for this video Marie! I have a couple questions. This summer I chopped and froze a lot of red and orange peppers. Can you use frozen peppers? Also, is it true that it doesn't matter what color peppers, as long as there are 8 cups? I bought my Presto digital canner this summer because of you all but I have yet to use it! I would love more videos on you all using that! Do you have one on how to do bone broth? I haven't found it yet. Thank you again! You all are so wonderful and we just love you!

      It is not thick like traditional jam. It's definitely a pourable jelly.

    Please use gloves when dealing with hot peppers I don’t know how many times I thought I had them washed off my hands and didn’t then my eyes would burn from it
