How to Use MS Word Developer Tab to Make Forms

I have a fillable protected quotation document. Is it possible to enter multiple choices of complete customer names WITH addresses in the drop down choices? All I can get it to do is customer names. If I enter the names with addresses, it all comes out on one line.

I used the "Plain Text Content Control" with "Allow carriage returns (multiple paragraphs)" setting turned on in the content controller properties.
Once the test is entered into the control by the user - If the user wants to format (bold, italic...) a word/ a line - the whole text in the control gets formatted. How I can allow the user the format the text

I was using the text box in legacy tools to make a field where it allows only 4 numbers to be written (it has to be years that include 4 numbers and not more or less) but it didn't work even after i edited the max length of numbers in the control panel, i was writing in those fields and it allowed me to write words and numbers however long i wanted them. How do i fix that

Thank you for your video. Is there a way to lock a fillable text box so that it won't get larger or smaller as text is entered into it? As the box gets larger with added text, it pushes everything down to the next line. Thanks you.
