How To Make A Korean Chopped Cheese
Вставка
- Опубліковано 21 вер 2024
- Chef Jae Lee of Nowon in NYC presents his take on a mashup of Korean and New York City cuisine: chopped cheese rice cakes. This one-of-a-kind dish takes inspiration from an iconic Uptown sandwich and Korean comfort food, and includes components like soy-pickled jalapeños, homemade scallion oil, classic American cheese, and a secret bodega spice blend. "Americans will see me in America and they'll see me as a Korean, but when I go to Korea, they see me as an American"
Dude I'm half Taiwanese and that hit on a whole different level.
It's the second generation immigrant experience
when I went to visit korea my cousin basically said that to me. She said, "you look korean but you're not one of us because you've never lived here. we see you Korean Americans the exact same way we see any other foreigner." I forgot exactly what we were discussing for that to come about but it kinda hit and felt weird to hear but it's true I guess. After that though I became an even prouder American. 😁
Honestly he doesn’t look Korean at all
In America they call me Chinese, even though I’m from Taiwan.
In Taiwan they call me American
because he cant speak the language.
Had a Korean homie growing up and his grandma used to make rice cakes in chili sauce for us all the time after school. Respect to K-town
Is that 떡볶이? Dduk bukk yi,
LA holding it down!
Tteokbokki/Ddukbokki! It's rice cakes cooked in a sauce made from gochujang
Rice being my last name my knickname as highschool football running back was rice cakes... along with rice & beans from the mexicans guy I worked with, and rice-a-roni from the bullys elementary school... I also used to tell people my middle name was "Fried"... why I'm telling you this I don't know.

Shoutout to all my beautiful Asian brothers and sistas!!! You’re passion and creativity is appreciated! Much love to all the amazing countries/cultures of the world as well, can’t wait until we can travel again I’m ready for some good food!
love right back bro!
respect love this comment!
I respect the vibe. That level of alienation from both sides, yet you love both. I love that he brought both his worlds together using cooking. I dig it
From what I've seen from the UA-cam algorithm Koreans love putting cheese on food
Good observation Isaac, we def do 👌
Yes
Cheese and food?
Cheese corn so fire
Yes. We don't know why, but we love to put shit ton of cheap Mozarella on our dishes.
When he said what he said about this just being who he is, it hit home. As a Japanese American, I have always felt that I don’t fit in perfectly either here or in Japan. But it’s my identity, so no choice but to lean into both sides with pride.
Oh...tastes like money totally deadpan had me dying
Nobody really American tho besides native Americans. If my fellow white folks treat you like you don’t belong tell them to go back to Europe real quick. The problem with whites and blacks is we are both removed from our cultures so heavily. However black Americans have a more rich and defined culture here in America. Where as whites don’t really have much. We almost have no ties to our European birthplace either. I’m Scandinavian but my family has no traditions from those countries anymore. So it’s kinda sad. Embrace who you are. Love yourself. My dream is to go to Japan one day.
@@user-rm8np6dg6c 👍
Man, I felt it too, ethiopian-american here
@@user-rm8np6dg6c lol it’s not like blacks have their African culture either. At least you know that you’re Scandinavian, majority of African Americans could even tell from what part of Africa they are
Well i have it worse than you. Im a chinese indonesian. Im chinese but living in indonesia so we never fitted in. Most of the people here are kind but there are just some who looks at chinese as weirdos/ people who stole their jobs and getting rich. Its harder for us for being chinese here. And like you said when i went to china we felt indonesians but when we went back home we felt like chinese and never fitted in. I guess we just have to learn to fit in.😂
The seasoning the deli guy uses is Goya Adobo!
This guy is the smoothest chef ever
its cringe
Agreed. Dude is a smooth criminal

Butcher: 👁👄👁 nah
Jae: mhm...

Usually the ocks in the delis season it with sazon goya
It's like Korean Poutine! Those flavors all sound fantastic...and the textures...fantastic!
How do you even describe this to someone else without showing them this video this is wild. So many flavors in a bowl.
Ah, looks like my type of anju!! More recipes from K-town please 🙌 ps, Listen to the chef when he says dont keep the rice cakes in the deep fryer for too long~~ those ‘cute’ suckas like to explode like mini firecrackers 🌈 🤷♂️
Might have to do a take on this aswell Dan.
do your take on this with ingredients local to you in korea !!
DANYUL
Love you channel
another way is to pan fry it and utilize a lid! obviously don't want to cook them for too long!
I love your video. I also appreciate your plugging where you got your scallions and to support local corner stores/restaurants. Tough year for everyone but we will get thru it. We do not have a Korean Restaurant in my town here in Upstate. So I watch you and Maangchi to learn to how make my food at home. Not the same as a good restaurant. Red Chili in Elizabethton, TN is my favorite ever. I think, if I ever got down to NYC I would love yours, too. Peace and Prosperity, my friend. Feb 2 will turn a new corner for you and your business. You will have your best year ever in 2021.
Farideh is a Munchies employee. He got the scallions from her garden (or maybe the Munchies garden), not an actual store/market lol.
Farideh is the amazing host who welcomed me into the Vice munchies kitchen. It was a true privilege to be on the show.
He said the "Americans see me as Korean but Koreans see me as American" so smoothly but I know it took some time to heal those wounds. I'm a first gen and definitely took some time to process those lines.
That feeling when Korean people can’t understand your Korean... feels bad man.
As Korean NYer, this is something I'd only purchase at a restaurant. I'll stick to my chopped cheese w/ some hot sauce to-go. With that said, guess I have a new restaurant to visit.
Why not just make it yourself? Seems pretty straight forward. I just don't like how joints overcharge for shit like 떡볶이 and 파전.
@@cliffc3673 I can only see myself eating something this rich when I'm not sober. But what's quicker and cheaper? Definitely a quick walk to the bodega for a chopped cheese. But I'd just want to try this to see if it's any good at all.
Definitely hear your point, but they have to keep the business running somehow
@@APJ9000 i hear that. I never considered how dumb/dangerous it would be to try and make this shit when not sober haha.
@@cliffc3673 😂
He was 100% baked when he made this
Thats how he is literally.
I use to work for him .
@@SifuFreeGamer1417 lit , it looks so delicious the guys seems awesome
Thats iffy.. he's a good chef but I don't trust the company their not trust worthy . (Sneaky)
@robert yea ok. Watching on UA-cam an working for him is another .
Me thinking, that we are doing Korean-American recipe when the Parmigiano Reggiano shows up: "Everybody welcome to fckn Italy mamamia :D"
i fully felt what he said about going back to his home country. im italian but have been in england for many years and dont feel i fit in either way, im not really italian to them anymore but i will never be british :(
@Moe Lester huh
“This is my secret spice recipe”
“Bro u sure it’s not old bay, I think it’s old bay”
I’d be interested to see if he has a variant dish that replaces bean-paste sauce with gochujang.
Bean paste as in ssamjang or jjajang?
@@numbaoneg101 doenjang that was used in the video also described as korean miso is a bean-paste. ssamjang is a hybrid of gochujang and doenjang!
Korean Chopped Cheese, nice.
*makes it*
wait, where the hell is the bread?????
"Number 1 Rule is there's no rule" - Honestly shows how influential Morimoto is.
He should make his own youtube channel. His personality is perfect
This is wild. I have not concept of what this would taste like.
Same here. Like I look at it, and I want it to be mac n cheese, but I also know there's no way it tastes anything like that.
very umami
You’ll have to come try to really find out 🙏
imagine a REALLY chewy and bigger version of gnocci and that gnocci was in a cheesy, beefaroni type of sauce. I've described that to others and they seem to think it's fairly accurate (referring to the traditional dish this is remixing).
please, @@cliffc3673 , I'm a married man! 😂
it sounds so bomb. Probably going to have to try making some of my own this weekend.
If Peter Griffin was a Korean hipster this would be him.
Hahaha...I can't unsee it now.
Tonight on Munchies How-To: Korean Beef-a-Roni
Seriously though, this looks like it slaps
When jae makes a reference to morimoto being his old boss 4:41
I've never seen this kind of food in Korea. It seems he got the concept of soy sauce rice cake and made a totally different one!
That’s straight up hamburger helper. I’m not mad about it.
LOL I thought the same thing
I was thinking the same thing! Lol
Another way of looking at it! I’m not mad at that either. At the end of the day it’s how the dish tastes.
Lmao
Chef Jae serves nothing but bangers at his restaurant.
My dude with the dishwasher jacket and the gold chain
Nothing beats original chopped cheese
why is the music so loud!!
Yo, my Korean friends are about to have their minds blown. 😭😭 Gotra make some for my students too! This is a GREAT fusion!
OUFFF MUNCHIES BACK AT IT AGAIN WITH 🔥 CONTENT.
This combination speaks to my heart ☺️ I need this!!!!
Hello
One of the best chefs I know! If you have the opportunity to go to NOWON, I highly recommend it!
"you don't want greasy rice cakes. My grandma will slap you in the face for that"
"I didn't see you there world" lmao great stuff
Poutine comes to mind watching this. Really awesome recipe!
Love everything about this video! The chef, the food, the inspiration!
Seeing the Thumbnail: This looks good I will make this
Watching the Video: Wait i need a blow torch!
Born and bred New Yorker here, no I’m from the bx and the chopped cheese was made in harlem on actually 15 mins away from me and even tho that’s not a chopped cheese I’d still dig, that looks banging. Better put this on your menu bro good dish
Lovely twist on a chopped cheese, love the pickled jalapeños perfect!
This guy needs a cooking show!
I can bet money the seasoning his deli guy was either Sazon or Adobo by Goya. BET MONEY
No .wrong 😆
Had these last night at Nowon. 5 FLAMES. The fried chicken was SO fucking good too.
Prime example of fusion for the same of fusion.
The middle eastern labneh is completely left field but I can't imagine how good this tatses
집에서 꼭 해봐야겠네요
Ideal comfort food that transcends all borders, yum! I have to try this recipe. Food is love
I fw this fusion heavyyy, hope it gets people to try an actual chopped cheese uptown as well
All about that immigrant life. Respect from a half South African Scottish guy who grew up in England!
Chef Jae Lee might be one of my favorite people ever
so basically Hamburger Helper w/Rice cakes. SOLD.
Great vid. Love chef Jae's vibe -- more videos from him in the future please!
🙌🙌🙌
@@jaelee570 Hittin up Nowon next time I'm in NYC -- but need some (more) vegetarian options!
We don't have those in Korea but it looks great fusing both cultures!
Obviously
Wowza! Eddie Huang got tired of being black and is trying Korean. Loving this episode ✊🏼👌🏼
OLD BAY THOOOOOO !!!! Genius.
I love his attitude with cooking. More! On a chopped cheese roll right now (saw Kenji’s first)
Cool! Awesome job Chef Jae!
lol people in the comments both mad that this isnt a chopped cheese nor korean. you guys he invented his own dish, relax
Visually, it reminds me of Hamburger Helper. It reminds me of home as a kid.
I tried to make this at 3 am last night but forgot I don’t own a blowtorch.
Okay this looks the ultimate comfort food
I bet an old shoe taste good cooked in that scallion oil!! I have to go to this restaurant!!

This looks absolutely bomb
OMG this looks so good!!!!

The Korean fusion dish I didn't know I needed!
This dish is looking 🔥🔥🔥
Definitely hittin up Nowon next year to try several dishes on the menu 😍😍😍😎😎😎
Stay safe Chef Jae and see you soon!!!
Love from L.A
I like the material but damn - the music is so damn loud and distracting
love this guy!!!
Brother, those Ocks don't put Old Bay. They use Sazón Goya.
So hungry after seeing
Immediately I like this guy, reminds me of the new David choe a little
or he's just himself lol just because he's asian doesn't mean he needs to replace or be the new David Choe
@@xocoworld6331 no, I mean there's two different David Choes lol. The old one and the new one. He used to be a lot different you see. He's also one of my favorite people, so it's a huge compliment in my eyes. A very authentic person.
@@Daithi_mk I see ok I get it
from what i usually see the red seasoning is usually Sazón Goya

Hey buddy, we see you as an American and we’re proud you’re here.
Thanks Jeff! I grew up feeling different but as an adult I definitely feel way more accepted now. More than ever. So thank you.
This looks SO bomb
This recipe is creative as hell, for real.
only a vice munchies chef would wear a snow white button up in the kitchen
Very cool! Reminds me of a spot in new orleans that would do a Korean spare rib po boy
More of Jae Lee please
So we took korean food and made tacos with it. NY took korean food and made pasta lol feels pretty fitting.
I'll be sure to pass by one day at your restaurant and try it out
Thanks for the recipe 😄
