8 Colorful Bell Peppers
1 Red Bell Pepper*
1 Orange Bell Pepper*
1 Red Onion*
1 Jalapeno or Poblano Pepper *
1 Tbsp Garlic (minced)
1/2 Cup corn
1 15 oz Can of black beans (drained & rinsed)
1.5 Cups of Cooked Wild Rice
1 Cup of tomato sauce
1 14 oz Can of diced tomatoes
1 tbsp Chili powder
1 1/2 tsp Ground cumin
1/2 tsp paprika
1 1/4 tsp salt
1/4 tsp ground coriander
1/4 tsp cayenne pepper
Cheddar & Monterey Jack cheese

I'm not vegetarian. i just like good food and this sounds just as good as meat versions. nice use of spice and ingredient combosthe sauce mix on top was a pro tip. as it cooks all the right flavors melt down into the rive but also dissolve moisture enough to thicken yet everything is perfectly moist and juicy but not soggy. veggies w a slight crisp but easy to bite through. amazing execution. you're obviously a good cook

I love this recipe you don’t have to follow it exactly and there is lots of room for experimentation.
My girlfriend regularly makes stuffed peppers and always does different stuffing, mince beef, mince lamb, veggie etc feta or halloumi are good cheeses too especially with mince lamb.

Do you cook wild rice same way as regular white rice?
Why you boiled the peppers if you going to bake the peppers
To soften them and shorten the baking time. Remember all the stuffed ingredients are already cooked, so you're really baking the bell peppers long enough to allow the cheese to melt.

OMG thanks for bringing that blooper to my attention. I didn't notice that I said the wrong thing, normally I would a jalapeno pepper for this recipe but had to use a poblano in this video. Either works great with the recipe! Hope you like 💖

Well, I nailed your recipe. It was delicious. Not surprisingly, I made a lot more than I thought I would. Lucky I was able to freeze the surplus into portions which I and my friends will be able to enjoy on later occasions.

This is very interesting to watch same dish from another part of the world. In Eastern Europe we use Turkish yellow peppers, they have softer skin and don't need pre boiling or flying. The stuffing is minced beef or pork, rice, caramelised onion and tomato piuree. We bake them in deep dishes covered in water and tomato sauce and in between we place potato quarters to keep the peppers up during cooking. My mom does a vegetarian version with mushrooms and carrots, still amazing. They are saved with sour cream on the side

We do this in the south. Almost the exact same thing except for we dont use potato. Atleast my family doesnt.

You can probably find vegan cheese at a Whole Foods Market or Trader Joe's. I haven't tried this recipe with vegan cheese yet.

What cheese is Monterey Jack cheese? Not heard of it in uk
It's an American cheese that has mild flavor and slight sweetness. You can use any type of cheese that you like for this recipe.

interesting one, I personnaly do not boil the peppers as I prefer a crunchier outer layer but to each there own. Great recepe!
