I was wondering along similar lines. Maybe he doesn't have celiacs or an allergy? I don't have celiacs myself but I do have an allergy to wheat and dairy and a sensitivity to soy. So wheat and dairy mess me up big time but soy is dose-dependent so I can eat a little without a terrible reaction. Maybe his issue with gluten is a sensitivity

Even in your worst times you made us smile. Being homeless was such a challenging situation and even when you ended up making us laugh, all while being a great boyfriend/husband, and dad.
