There are lots of TXT animation presets in Ae. "Effects and Presets"/Animation Presets/TXT/... you have at lest 15 different type...

Sometimes It breaks when I type a new end number, but not when I adjust it with my mouse.
Also beware- I have no idea why it happens sometimes but doesn’t happen others- but when you add trim paths sometimes it makes trim paths a sub to your final letter, which makes individual not work.
I literally did step by step the same and sometimes it did it like in the video and sometimes it did it like I said....
This is why, as cool as it is, I hate after effects, because 1 atom out of place makes the universe fall apart.

However I still have a problem for days now with this, because I have a smartphone icon with some transparency and I need to apply the trim path effect on it only on the borders of the shape exactly like you did but instead I get some weird animation filling the whole icon including the transparent parts. for your example at 6:22 is there a way to do this as easily with the text filled instead of just the stroke? I've looked all over the place online and everybody is saying to use the pen tool and manually draw the letters, but that's crazy time consuming and not a clean way to work!
