1 package smoked bacon, chopped into small pieces
6 medium sized yukon gold potatoes, diced
2 medium onions, cut into slices
4 cloves garlic, minced
1 bottle Guinness beer
1 bunch fresh minced parsley
3 bay leaves
1 teaspoon dried thyme
Fresh cracked black pepper
32 oz chicken stock
