    Ingredients:
    250 grams Parwal (pointed gourd), chopped
    2 Medium Potatoes, diced
    3 tablespoons Cooking Oil (mustard oil or vegetable oil)
    ¼ teaspoon Cumin Seeds
    1 pinch Asafoetida (hing)
    1 Green Chili, chopped (optional, adjust for spice)
    ¼ teaspoon Turmeric Powder
    ¼ teaspoon Red Chili Powder
    Salt to taste
    ¼ teaspoon Coriander Powder
    ½ teaspoon Garam Masala Powder (optional)
    1 to 2 tablespoons Chopped Coriander Leaves (for garnish)
    Instructions:
    Prep Time: Wash and chop the parwal and potatoes into similar-sized pieces.
    Heat Up: Heat oil in a pan or kadai over medium heat.
    Tadka Time: Add cumin seeds and asafoetida. Let the cumin seeds splutter for a few seconds.
    Sautéing Fun: Add the chopped green chili (if using) and cook for a few seconds.
    Potato Power: Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they start to soften.
    Parwal Party: Add the chopped parwal and mix well with the potatoes.
    Spice it Up! Add turmeric powder, red chili powder, and salt. Stir and cook for another 2-3 minutes, allowing the spices to release their aroma.
    Water Works: Add a splash of water (about ¼ cup) to prevent burning and help the vegetables cook through. Cover the pan and simmer for 10-12 minutes, or until the potatoes and parwal are tender.
    Finishing Touches: Once cooked, add coriander powder and garam masala powder (if using) and mix well. Garnish with chopped coriander leaves.
    Tips:
    You can adjust the amount of chili powder according to your spice preference.
    For a richer gravy, you can add a tablespoon of tomato puree or chopped tomatoes along with the green chili.
    This dish tastes even better the next day, so feel free to make a big batch!
