  • Today on Booze On The Rocks we how to Make the Deamon's Head cocktail with Empress 1908 gin. This simple cocktail comes out of the Gotham City Cocktails book. Although it calls for Vodka and Butterfly Pea Flower fluid i Choose to use Empress 1908 Gin as a substitute. It came out great. The first is a Kraken and Cola. Try it and tell me what you think.

    DEMON"S HEAD
    2 oz/60 ml Empress 1908 Gin
    1 oz/30 ml Cointreau
    .75 oz/22.5 ml Lime Juice
    Method
    1. Add Gin over fresh ice in glass and set aside.
    2. Add remaining ingredients to a shaker tin.
    3. Shake with ice for 10-15 seconds.
    4. Pour slowly over the gin and ice.
    5. Stir gently to combine ingredients.

    I made it w Empress gin and it was delicious! As you said, very gin forward but the Cointreau and lime add a lovely citrus tang without being too tart!

    Hi, Dave! First off, I want to say that I follow your channel for some time now and I'm a huge fan! I do cocktails for fun, at home. So, I did make this one with vodka and butterfly pea extract for cocktails (because this is all we have here in Southeast Europe, Empress Gin is not available around here). It turned out quite well. I was thinking to top it with Sprite but I didn't. The color was amazing once you poure the lime juice+Cointreau over the already blueish vodka. Thank you for the recipe!

    This looks great! Is the purple colour from the gin itself?

      The purple comes from the the gin which contains Butterfly Pea Flower Tea. This ingredient is the dark purple that changes color when citrus juice (lemon or lime) is added. You can use these flowers to infuse gin, vodka, or rum. Or you could make tea with it.

    What’s the reason for not shaking all three ingredients? Is it to get the colour gradient when you pour the lime/Cointreau into the gin?

      Nicholas, The original recipe would have been much lighter in colour, however you are correct. It would be to get the gradient and keep the original spirit strong. But you could shake all the ingredients together to make it easier.

    It's hard to find this gin to buy online, do you have any suggestion that might be as good as 1908 with the same color?

      That would depend on where you live and what is available. There is also H2 Craft Metamorphosis Indigo Gin. However if you cannot get that you can order some Butterfly pea flower tea and use it to infuse some of your favorite gin. That will give you the same effect.

      You can, but you would need to infose it with butterfly pea flower tea to get it to react the same way.

      It's the reaction between the butterfly pea flower that is in the gin and the citric acid. That turns the dark purple to light purple

      Hi James, You are correct this could use some simple syrup. Try it out and adjust accordingly to your taste and let me know what you think works best.
