  • A Middle Eastern Twist on Classic Potato Salad: with Za'atar, Tahini and Pomegranate
    In today's video, we show you how to make a delicious Za'atar Potato salad with tahini and pomegranate. Zaatar is a Lebanese spice mix that contains various herbs including oregano and thyme, as well as nutty sesame seeds and tangy sumac. It is often sprinkled on hot bread to give a kick of flavour, but today we have created a unique Middle Eastern inspired potato salad using all these wonderful flavours. This fresh baby potato summer salad can be enjoyed as a main or eaten alongside other main dishes such as grilled meats or chicken.
    To make the Zaatar potato salad, you will need:
    2 tbs extra virgin olive oil
    1-2 crushed garlic cloves
    juice of one small lemon or lime
    2 tbs tahini (sesame seed paste)
    2 tbs Za'atar (also known as Lebanese Zaatar spice mix)
    salt to taste
    1/2 tsp black pepper
    1/2 tsp red pepper flakes (Aleppo pepper)
    1/2 tsp sumac
    800g boiled potatoes (we're using baby potatoes)
    1/2 cup fresh parsley
    2 tbs fresh mint
    pomegranate seeds
    half a red onion finely chopped
    *The Zatar potato salad can be served immediately or you can allow the flavour to develop for 1-2 hours before serving.
