- Dudh Poha With Galka Bhajiya
Take a Kadhai and add
Little Water
1 Lit - Milk
Keep For Boiling
Boil Milk in Slow Flame
Take
1+1/4 Cup - Poha
Wash Properly and Keep Aside
Pakoda
Take a Bowl and add
1+1/2 Cup - Chickpea flour
1/4 Cup - Cornflour/Rice Flour
Salt to taste
1/4 tsp - Turmeric Powder
1/2 tsp - Red Chilli Powder
1/4 tsp - Carom Seeds ( Ajwain )
1/2 tsp - Crushed Coriander
1 tbsp - Ginger Chilli Paste
1/2 tsp - Asafoetida (Hing)
Mix and add
1 Cup - Water
and make a batter , Whisk Properly till little Colour Change
In Milk
1/3 Cup - Milk Powder
1/2 Cup - Milk
Put into above Milk and Mix Properly
1/3 Cup - Sugar
Mix Properly
2 tbsp - Saffron Milk
Mix Properly and add above Soaked Poha and Mix it and Put
1 tbsp - Almond Flakes
1 tbsp - Pistachio Flakes
1 tsp - Cardamon Powder
Mix Little and Keep aside n Serve
Take a
2 no - Galka ( Ridge Gourd )
Cut the Slice Cross
Keep Oil Hot for Frying , from that add
1 tsp - Oil
Into batter , Whisk Properly
2 Pinch - Baking Soda
1/4 tsp - Lemon Juice
Mix Properly
1 tbsp - Coriander Leaves Chopped
Mix again Properly
Deep Galka Slice and Fry till Golden
Take a Small Bowl
1 tsp - Chaat Masala
2 tsp - Red Chilli Powder
1 tsp - Black Pepper Powder
1/2 tsp - Asafoetida (Hing)
Pinch - Salt
Mix Properly
Sprinkle Masala , above the fried Galka Bhajiya
And Serve With Dudh Poha
Garnish With Almond and Pista Flakes

For Galaka bhajya my suggestion is to taste before cutting as there is always high chance that they taste bitter.
And with duo respect Madam, my suggestion is not to use that plastic spatula . Though it is heat proof it is not good for health. Instead go for SS
