How to Make Coconut Flour Pancakes

  • Coconut flour can be tricky to work with, so today I'm sharing a recipe for fluffy and delicious Coconut Flour Pancakes. All you need is a handful of ingredients and one bowl to stir them all together!
    These pancakes are naturally sweetened with a little bit of maple syrup, but if you can swap that for a zero-calorie syrup, if you want to make them sugar-free. In that case, these pancakes have just 1 net carb for those following a low-carb or Keto diet plan.

    Glad i popped in on this video. I literally just tried making some 1/2 almond flour & 1/2 coconut flour banana pancakes and was wondering why the inside wasn't getting done. Now that you made mention of how coconut flour is, totally understand. I had gotten so mad that I tossed the rest of the batter and the pancakes in the trash. thanks for sharing.

    OMG! I just made these pancakes I used sugar free maple syrup and they came out wonderful!! I just finished eating them for dinner I feel so guilt free since I have Diabetes and know this was a low carb meal. Thanks for the easiest recipe and delicious too.

    I made these with a sugar free maple syrup. Delicious 😋. Also my mixture was a little thicker. Maybe I had too much flour or smaller eggs. But the batter was perfect for my waffle maker. The waffle was amazing.

    Me and my mum made some of these pancakes today! I had some for breakfast and they tasted delicious! My pancake batter didn't look liquidy at first, but we added water, and it turned just right.

    This is the first recipe that actually worked for me....1/4th cup of flour with 3 eggs. The first time I tried making coconut flour pancakes from a cookbook there was way too much flour compared to eggs and other ingredients.

    I loved the recipe. A suggestion: be aware that olive oil is not to cook since it oxidarse when is warm up so the only oils that don’t oxidate are gee, butter, avocado oil and coconut oil.

    If you are on keto you cannot use maple syrup because it has too much sugar in it as a substitute use stevia which is the only thing I recommend because Splenda has too many other ingredients in you don't want in your body. My eventual goal is a Masters or a doctorate in naturopathic medicine in nutrition so please follow my guidelines I've researched this a lot and I am doing this recipe myself thank you for a great recipe

    I tried it mine came out horrible! The taste was awful 😞 maybe I did something wrong ? But I followed all the same EXACT steps. And I’m not picky with flavor but yuck I had to throw it all away 😓

    Perfect serving size for 1 person, i was able to make 3 palm size pancakes. I used 2 tablespoons of erythritol instead of maple syrup, used half the baking soda (1tsp i could taste the baking soda) and cooked in butter instead of olive oil, came out perfect. Thank you for the recipe! Great for keto

    I put honey instead of maple syrup. They don’t taste the best on their own but I put peanut butter and bananas on top it it was really good

    I just made them. They are great. She is right about being patient. I broke one in half because I was rushing it. I used a lid to cover them to help them cook evenly. They look beautiful and aren’t eggy at all.

    Hi,ive done this recipe now and ppl are right. Even if i used eggs at room temp (been in the kitchen for 5hrs) and used the universal measurement 1/4 cup = 60grams ,the batter was not usable unless i added some sheep milk. I also didnt used maple syrup bcs i never do,i added raw honey when i served them 🙂
    They do not taste strong as eggs(i used free range eggs) wich i love and olive oil doesnt affect the taste either (i used a mix of extra and non extra olive oil made for cooking) I also used a non sticking pan in wich i added drops of olive oil for each pancake so i didnt drown them in oil.
    So im thinking the only issue here is the flour. I used organic coconut flour,also at room temp but i suppose its different from brand to brand,country to country.
    For those who dont want/like milk,i dont know how to make the batter thinner but for the others,just use milk,little by little untill you have a semi runny consistency.
    I hope this will help others to make this recipe 🤓

    never saw a pancake recipe where the maple syrup is added to the mix . what"s that about? can I omit or substitute?

      Most pancakes call for sugar, so I use maple syrup instead because coconut flour requires a lot of liquid to work correctly. I'm guessing you could use water in its place, if you want a sugar-free recipe, but I'm not 100% sure how that will work.

    What kind of coconut flour are you using? I tried buying the finest one availed to me and can't get them to form a batter. It just keeps absorbing whatever liquid I pour on it. And looks more like wet sand.

    I made these today - one kiddo liked, the other didn't. Personally they were just "ok". I prefer my 1 banana - 2 egg- coconut flour pancake that I make that both kiddos like which are thicker & tastier. These were very thin.

      cherryviktoria
      1 ripe banana mushed with fork
      2 eggs
      3 1/2 tablespoon coconut flour
      1/2 teaspoon baking soda
      Cinnamon powder (I use a lot)
      Mix eggs and banana first then add dry ingredients
      Stir
      I cook it in coconut oil in the pan
      Low - medium heat
      After it’s cooked I add honey to it
      My little kids love it

    Isn't it too much oil for it to be healthy? Can it be done on a non-stick pan? I've done banana-oat pancakes and they require no oil when being passed by fire.

    You're making these with coconut flour, which is awesome. I don't understand why you wouldn't use coconut oil in the recipe and to cook in, especially since olive oil is savory and also breaks down at relatively low heat. Additionally, it's pretty well-known that up to 80% of olive oil on the market is adulterated. It's light sensitive, very susceptible to degrading, and goes rancid in a few months (assuming it wasn't rancid when it was purchased, which is not a good assumption). The recipe itself looks great, but for pancakes, coconut oil would make them perfect.
    I'd love to hear your response after you compare the two.

      It's because the egg is usually cold from the fridge, and if it were to come into contact with melted coconut oil, the oil could thicken up and clump. This batter is already trickier to work with than a traditional recipe, so I don't want it to be any thicker than it already is. Olive oil doesn't thicken when it comes into contact with cold things, so that's why I use it here.

      Yes, I think either would be fine! The coconut oil might thicken the batter if you use cold eggs from the fridge, but they will still cook well.

      I ended up changing this recipe a bit. Now I make the pancakes with corn starch and coconut flour, one egg, olive oil, milk, vanilla and baking powder, salt, sugar. They taste delicious and hold together.

      Yes, you can. Just keep in mind that if the coconut oil touches cold eggs or maple syrup (if you store those things in the fridge) the batter could end up being thicker to work with.

    Good one. Finally, a simple solution to my sweet tooth. Does the olive oil not mess up the taste? Can I use margarine (Nuttelex) in the mixture and coconut oil in the skillet? I am just worried that olive oil especially extra virgin, will just dominate the taste.

      There's no law that says you can't. But you may need to try a couple of different times to fix it the way you want

      Dont use extra virgin oil when you fry.Maybe a mix of extra and no extra olive oil.Also,in the mix,will usually not affect the taste but is also very much depending on the oil you use.
      Margarine?? NEVER! In a non sticking pan you can use very small amount of olive oil to brush the pan before pouring the pancake batter.
      In the batter you can use melted coconut oil ,but also eggs need to be at room temp.

    Wish I would’ve watch TV before me these pancakes. Mine are all crumbly and fall apart. I did not measure anything and I left out the baking powder, oil, and the maple syrup part

    Mine stayed a bit clumpy even after mixing welll do you know why that would be? I feel maybe the flour is too old....

    Almost all coconut pancake videos i saw add 3 eggs. Is there a reason? Like, is coconut flour to dry when you cook it?

      Coconut flour "eats" more liquid than usual flour :)

    Respectfully; I would swap the olive oil out for ghee/melted butter for the batter, and cooking. Olive oil, especially if it’s old, imparts too much flavor into the batter. You want a nice, sweet, and nutty flavor, not an earthy floral flavor.

    I actually did your recipe! Which is really rare even that I love to do so many yt recipes I’m quite ill for last 2 years so I try to only do short/quick/easy recipes that in case I fell ill can finish quickly 😢💝😫🥺 I have to say I don’t have maple 🍁 syrup and unfortunately I couldn’t add it so I added everything else but I used pure Mexican vanilla in liquid that my mum bring from Mexico holiday 😅😊 and I added 1 desert spoon of sugar and unfortunately my texture of the mix was way to thick so I added equal amount of oat milk as the amount of coconut flour the texture became more thin and I cooked them on pan with coconut oil they came out almost the same in look I made 9 pieces so me and my mum each did get 4 pieces and the 9 th one was a try on after frying first batch that’s when I added more sugar that I mentioned above i did get 1 full Pyrex measuring 500 ml jar of the batter and as said it gave 9 pieces which is decent amount it was quick and easy 😇☺️and when we tried it it felt like I’m eating coconut dried sprinkle pieces (it’s my first time trying coconut flour and it smells so Beautiful 🤩) also they are very delicate and brake to small pieces so easy I did eat them with bit of Nutella but most importantly I will recommend eating them with fruit 🍌 yogurt with forest fruits. Or any other taste it just mixes well with pancake taste and will make you more full and it will be less dry especially nice for kids 🤪🧐🤓 I did get my flour from Amazon for just 2.75 pounds which is crazy for a good organic non GMO product plus it helps Sri Lanka 🇱🇰 people live good decent lives for producing and farming it’s a 500 grams size and even got great taste reward anyone interested I recommend you look for their brand called SEVENHILLS WHOLEFOODS direct from farms the packaging is lovely ☺️ few hills above their brand name some small mandala design and piece of red trail on map I was just blown away for that good brand so cheap with prime delivery 🚚

    Made these a few days ago & was like meh they’re really cakey. Today I separated the wet from dry ingredients, cooked on a lower heat and took them off when they were slightly underdone & they were much better! But soooo much sugar in the maple syrup 😩

    has anyone tried 2 tablespoons butter, i dont use olive oil ,and i dont use maple syrup so i used stevia

      Melted butter should turn out similar to olive oil, it will just make the texture a little more dry when the pancakes are no longer warm.

    can u do this without baking powder? i tried this before and the heat was too high and no baking powder and they came out horrible

      You could maybe use baking soda, instead? I usually use 1/4 teaspoon of baking soda per egg for recipes.

    Thanks for the video! Can i sub out the olive oil for butter and does this recipe serve 1 person? If I want to quadruple this recipe, can I just use 1 full cup of coconut flour and 4 or 5 eggs instead of 12 eggs? Thanks!

      I can usually only eat half the batch if I'm eating something else with these pancakes, but the serving size can vary by person. I wouldn't use less eggs if you quadruple the recipe-- coconut flour isn't very forgiving when it comes to making a substitution in recipes.
