Spinach and Cheese Empanadas

- Ingredients:
Dough:
300 gr. AP flour
100 gr. Butter
1 tsp. Salt
1 tsp. Baking powder
160 ml Soy milk (or water) lukewarm
Filling :
1 onion
2 garlic cloves
300 gr. spinach frozen (thawed and squeezed)
150 g Gouda or any other semi-hard shredded cheese
1/2 tsp. salt
1/2tsp. pepper
pinch of chili powder
1/4 tsp. nutmeg
For brushing:
3 Tbsp. soy milk
2 Tbsp. olive oil
1/4 tsp. pinch of turmeric

I only have fresh spinach, I never buy the frozen stuff. Could I replace with fresh if I it sautéed myself and squeezed out the liquid 😁🤤
Yes of course you can just, as you mentioned, squeeze out the liquid and finely chop the spinach. Thanks for watching.
@@sweetsavoury and for the flaky result of the pastry casing, what would be a good alternative for AP flour, I recently learned I became gluten and lactose intolerant. I already found lactose free cheeses and lactose free butter in the store but most flour I come across still has gluten 😣
I personally, when I have to replace wheat flour, always use chickpea flour because it gives me similar results and it's gluten free. Regarding the fleakyness I don't think you can achieve it without gluten in the equation but anyway it's worth a try.
