    I Tried Fried Chicken made from Enoki Mushrooms... and it was pretty good. Best part, It took maybe 15 minutes.
    I recently saw Merle trying Enoki mushroom chicken from an instagram post by rhi.scran I'll link it below... and it looked REALLY good.. but there was one part I thought I could fix so I gave it a try.
    Curious what you think of how the problem could be addressed with this fried mushroom chicken or chick'n

      Next time i would marinade the Enoki in a Chicken Broth for some Hours and deep fry it in Avocado Oil instead. So it tastes a bit more like Chicken, because the Texture looks great! If it tastes more like chicken i think it would be a very very good chicken replacement.

    Mike from the channel Atomic Shrimp once used a huge puffball mushroom to make a fried chicken cutlet analog and he's used Chicken of the Woods bracket mushrooms as a chicken substitute and he always seems to be surprised how well mushrooms do in this roll so this doesn't surprise me.

      Ive done chicken of the woods and its been incredible!! Better than this version, but harder tom come by. I still have yet to try puff ball!! Can't find them

      @@SauceStache I don't think puffballs are cultivated much, at least I've never seen them for sale. You pretty much have to gather them yourself. Growing up we used to hunt mushrooms a fair amount and sometime tried puffballs. They pretty mediocre as I recall. Morels were much better.

      @@durwoodmaccool890 I've cultivated them. But they need a wild setup. If you find a well used horse pasture and drop a bunch of them you will probably get puffballs popping up. You can also make a slurry out of unsulphered molasses, non chlorinated water and a pinch of salt. Water the soil with that in an area with good substrate and they will probably take. They have a complex interaction with micro flora in the soil so you probably can't grow them in a lab.

      Chicken of Woods is only available in the Fall (October/November) on the eastcoast but it's amazing.

    What if you marinated them, but then pressed them in the tofu press so that it gets denser and drier

      Thats a great idea!! So I made the rest of them for dinner last night and before I fried them I pressed them between 2 paper towels for a few minutes... I think this helped. I was also considering boiling them first in a flavored bath, then frying them... kinda how the boiled mushroom trick works to begin with

    Made this last night and had an old classic “chicken and waffles “. It was delicious! Had some batter left so I made some onion rings. Very good!

    Make a fish filet with Enoki, the natural smell and taste of them is already fishy. Make a marinade that uses some type of seaweed, Kombu, if you can get which has great Umami flavor. Steam the Enoki first to help break down the cell walls so it is more easier to chew through.

    You have the best play-by-play ever.
    This looks very good! Enoki are so underrated!
    I think it'd be totally fun if you and Merle started to do videos together in a way. Maybe a type of call-out, like, you give 3 ingredients & she has to make something (and then limit the number of things she can add). And then she'd do the same for you in reply in the video where she made your call-out ingredients... I just think your two are both creative, and I'd love to see how you could build off one another.

    Great video. And congrats on the new sauce launch man! Looking forward to trying some when I'm back in the stateside. Thanks for being honest about the chew here, I've found it dangerously chewy in the past when eaten in clumps and not broken apart. I'm seeing so many people doing these whole enoki clusters just for the show of it. Appreciate your take on it. Keep knocking em out!

    I have never tried enoki mushrooms but this seems to be such a fun way to eat them! Would probably be a fantastic topping for ramen too!

      They are really good!! If you have an asian market around you they will almost always carry Enoki! They are usually around $2 a bundle and can be used for so many different things!!

    One of my favorite vegan restaurants in philly makes this!!!! Been eating it since like 2019. Best thing on their menu in my opinion. If you're ever in philly check out Nourish, their mac and cheese is bomb too

    Hey Sauce Stach, have you ever tried turning oils into powder by using maltodextrin? I Love using it on homemade chips, it can turn oils into dry powders. Seems like a good way of adding dry flavours into things for this video. Although I do not know how the powders behave when you expose them to a lot of heat, but may be worth a try?

      So if you have an asian market near you they almost always have them! But otherwise they can be tricky to find for sure

      Definately check out an asian market, most have them, and depending on where you live the mushrooms can be quite cheap! I believe one cluster goes for like 2 bucks where I live, which is certainly cheaper than chicken!

    Would letting them sit in the chickun powder for a few hours help dry and dry marinate them? Maybe add them to a smoker for a while to dry out Nd add flavor.

    This might be totally out there, but perhaps one could tenderize the mushrooms a bit with an enzyme rich marinade or nixtamalization.
    Also, there is a slightly more tender and thicker variety called "seafood mushroom" in Asian markets. This one may be easier to work with than the super thin version. I believe it's much more tender.

    I use them to make the "fish and chips, fish" in my country we call it fishknusperli translates to crunchy fish. The enoki I call crunchy mushroom. For that I kinda have the same procedure like you but the batter is made of flour, dill, seasoning and beer. With that I prepare a vegan tatar/Remoulade sauce (vegan mayo with little minced onions, pickles and parsley if I like it a bit lighter I add 2tbs of vegan skyr to the mayo) give it a try it's delicious. If you want it even more "fishing" just add some seaweed powder to the batter. 😊 ✌🏻

    I made these after seeing Merle and I did marinate them like she did.Though delicious..I found them really stringy and hard to eat. I'd have to warn others to really chew if I were to serve them. Curious to try the drier method.

      The chew was rough!! I think they have to be pretty dry for them to work. 50% of mine came out good, the other half still had the chew. I was confused when Monica just bit right in to hers no problem hahah until I tried another one hah

    the word "scran" is a Northern English slang used in a way similar to "grub", "munch" etc. Though i think the use of it has expanded out to other parts of the country too.

    I love the taste of mushrooms. I loathe with every fiber of my being, the texture of cooked and raw mushrooms. Where does the enoki fall on the scale of rubbery squishiness in comparison to say white button mushrooms? (I usually pulverize my mushrooms in any recipe)? Help! This looks so good.

    hello! for the future, I hope you're a bit more mindful that when you're editing your content that it'd be helpful to sync/align your verbal directions with your on-camera demonstrations. I had to rewind the segment where you went over the ingredients to the batter more often than I'd like. this could be a preference thing on my part but I think this would offer viewers a bit more clarity. otherwise this was a great video and my batch came out perfect. thank you!

    I really hate enoki I've tried them all around south east asia and I've made them myself, it's always that tough chewy texture and they get stuck into your teeth and they are not easy to digest as well 😅
