I fry sardine fillets all the time but because I prefer a crispy bite, I do not use egg. I make like a tempura batter instead

No sardines like that here in the States. I'm thinking ocean perch would work and probably blue gill.
I wonder if this will work with canned sardines.
Canned are already cooked and contain brine or water content, not a good idea.
