95yr old Mirella from Rome makes gnocchi with tomato sauce! | Pasta Grannies

- Mirella is full of character and energy! And her gnocchi are easy to prepare. Use a kilo of floury potatoes and allow around 250g of flour - enough to hold the mash together. For the sauce, boil a celery stick and carrot, fry some onion in olive oil with salt and chilli pepper, white wine, and add a 400g of whole tomatoes along with the celery and carrot. Blitz after 5 minutes cooking. The recipe is vegan up to this point, so adding Pecorino Romano cheese is for vegetarians and omnivores. Enjoy!

The sight of an Italian granny using a modern item like that stick blender tickles me, I think because I find delightful that her methods are for results and she has the acuity of wit to recognize when new methods better accommodate her means.
Stick blenders are older than me and I’m 37… I think it’s fair to use it as an 95 years old person. Makes life easier
Being old doesn't mean being stubborn, especially when new technology makes it much easier

@@pastagrannies oh no….not unless you want a foamy mess that strips the tomatoes of all their flavor (ask me how I know!). Just a pinch and it cuts the acidity of the tomatoes and lets the sweetness shine through.

Mirella is a gem! I love her recipe for a long life. I love making potato gnocchi. It is one of the simplest pastas to make and so satisfying. I enjoyed her sharing her stories and so sorry she lost her home. My mother was Roman as well and was 6 years older than her.

Vicky: You should go to Argentina. Gnocchi are very popular, traditionally we eat them on the 29th, because they are cheap to make and your salary is almost gone by then.
I'd love to visit Argentina! I didn't know gnocchi were popular there, but it doesn't surprise me since there's such a big Italian community (as you know). Argentina was a favoured country for Marchigiani (I have a home in Marche) to emigrate. 😊🌺 best wishes, Vicky

Just one thing: in the subtitles, "casalinga" might be better translated as "homemaker," rather than "housekeeper," especially given the context. Still, it's a great video, and her secret to a long life is well worth remembering!

So "homemaker" would fit how Mirella is trying to describe her sibling.

An italian granny would tell you that "it depends on the potatoes", if they have are too "watery" you need a yolk for cohesion :)

Bicarbonate of Soda neutralizes the acid of tomatoes, and canned tomatoes too often have added acids. A pinch is often enough. Sugar does not do that.
I'd second the 'pinch is enough' advice - you don't want the nasty soap flavour in the tomato sauce if you're generous with it! 😊🌺 best wishes, Vicky
