@@pastagrannies oh no….not unless you want a foamy mess that strips the tomatoes of all their flavor (ask me how I know!). Just a pinch and it cuts the acidity of the tomatoes and lets the sweetness shine through.
The baking soda is a brilliant idea that i do as well. It reacts with the acid in the tomatoes to cut down on the sourness. Perfect if the tomatoes in your area kind of suck. I also use it when i make anything with tomatillos if the end product is too sour, chili verde for example. Hello from Salt Lake City!
Mirella is a gem! I love her recipe for a long life. I love making potato gnocchi. It is one of the simplest pastas to make and so satisfying. I enjoyed her sharing her stories and so sorry she lost her home. My mother was Roman as well and was 6 years older than her.

I've saved many a sauce and chili with baking soda. Baking Soda knocks down the acidity in tomato sauces. I've had to use it when I bought canned tomatoes I've never used before (and never will again).

Oh oh, my granny added 1 egg yolk per pound of potatoes, to yolk or not to yolk? I need to try the difference.
An italian granny would tell you that "it depends on the potatoes", if they have are too "watery" you need a yolk for cohesion :)
I just taught a bunch of Girl Scouts that exact recipe.
Bicarbonate of Soda neutralizes the acid of tomatoes, and canned tomatoes too often have added acids. A pinch is often enough. Sugar does not do that.
I'd second the 'pinch is enough' advice - you don't want the nasty soap flavour in the tomato sauce if you're generous with it! 😊🌺 best wishes, Vicky
