- Ida never stops! We were fortunate to spend the day with her, going grocery shopping, tasting the delicious dishes she makes for Christmas, and playing cards with her. What a lovely day! Hope you're having a fantastic break, and let us know if you'll be making these recipes. Here's how Ida makes vitello tonnato, insalata russa and lasagna.
For the vitello tonnato:
1kg beef (silverside)
1 celery stick
half an onion
1 carrot
rosemary
200ml white wine
some salt
50g butter
For the tonnato dressing
canned tuna
6 anchovies
a tablespoon of salted capers
1 egg yolk
a teaspoon of flour
30ml corn oil
For the insalata russa
5 potatoes
6 carrots
4 celery sticks
1 can of tuna
some oil
some vinegar
some lemon juice
1 can of pickled vegetables
4 eggs
1 can of tinned peas
For the lasagna
Ham
fontina cheese
bechamel
meat ragu
parmigiano cheese

My mother eats horribly, but she worked till she was 80, by choice, and has an amazing and busy social life. She will be 89 on Mother’s Day and is still living in the home she and my father built 61 years ago. I am not advocating eating poorly, but it has opened my eyes to other factors that play a roll in longevity. Of course the world was less toxic back then too.
I'm two minutes in and just in awe how this lady, who is not far off 100, is moving! Respect. Just having a conversation with my brother, pasta is seen as the devils food yet this channel shows so many women, almost 100, cooking from scratch. Respect to the max.
She has to be the cutest this channel has had. I've said it many times, this channel is such a blessing. Thank you for sharing your art with us!

Ida is a dynamo! I love the scene where she takes you to her afternoon coffee with friends. How great to keep everyone connected and then the friends poke their heads through her window! God bless these ladies. Back to the food: the insalada russo is not one I’ve heard of. Still hand rolling pasta and then back to play cards. I’m exhausted watching her! Great episode!

Yum! My grandmother (from Croatia) makes Russian salad, but we call it Francuska salata or French salad. She’ll add gherkins, mustard & ham in substitution of the tuna & pickled veg. Merry Christmas Ida, your food looks delicious! God bless you🎄😊

My journeys to Italy have, of course, given me experiences of beautiful natural scenery, history, wonderful food and architecture, but have also taught me a way of life. Italians have a very wise approach to it.

It is called “insalata russa” because it came from Russia - it was invented by a Frenchman chef named “Olivier” in his popular namesake French restaurant in Moscow in mid-1800’s; the salad is called in Russia “La Salade Olivier” to this day (of course, beet is added in Russia); its popularity quickly brought it outside of Russia, so in Italy it is called “Russian salad”; in other places in Italy protein such as chicken and seafood is added; White Russian exodus brought it to China after the Russian Revolution at the turn of the 20th century, and the Chinese added ham and shrimps to it, sometimes lobster meat when fancy.

I’m originally Russian and we eat this salad (with some variation-crab meat instead of tuna, pickles and cucumbers instead of celery) for all holidays!

How sweet the final caress! I have two tips for Ida: 1) start your mayo with a spoon of industrial mayo, it will never go wrong (in Italy we say impazzire, "getting mad"); 2) add breadcrumbs on top of the lasagne, it will make for a delicious crunchy crust. I am proud to say that apart that, and the fact that my mayo is 50/50 olive and seed oil, our recipes for lasagna, vitello tonato and insalata russa are identical! (maybe it's because I am also piemontese).

My amama from northern Spain would make a version of this also called Russian salad for Christmas Eve, she would use potatoes, tinned peas and carrots, pimenton olives, tinned asparagus boiled eggs mayonnaise and tuna. My mother makes it now and I do for Christmas. Loved this reminded me of her, especially talking through the window!❤ lots of love from Australia

Ours was a very Merry Christmas! My children were here and I prepared our Christmas dinner for days! Christmas Eve warm polenta served with an Italian sausage tomato and mushroom sauce on top. We made 50-60 homemade ravioli stuffed with my special beef stuffing, Holiday Soup with tiny meatballs spinach egg and Parmesan...I didn't make my lasagna this year, 3 of my kids and their spouses were with in-laws this year. I made my famous spaghetti sauce and meatballs with all the sides and cheeses meats and cookies and candies... Red Wine flowing Champagne Bailey's in coffee and Amaretto and soda with orange slices plus Red beers for everyone throughout the morning afternoon and evening while playing cards! It was a fantastic Italian feast! My pasta machine got another workout and my old mother-in-law gave it to me over 40 years ago! She's long gone now but when she found out I was rolling out my pasta dough by hand with my rolling pin, she said no no no! Here this machine will save your hands arms and back! God Bless Mrs Falbo and for my Pasta Queen, she was a wonderful Italian mother, and did a fantastic job of spoiling her youngest son!!! Mr Falbo and I have been divorced for over 30 years now but we had five beautiful children... Great memories... Christmas was always very special... And still is..Loved the video what an amazing 96 year old Italian Mother!❤

I live not far from Castagnole and this was also the usual Christmas menu at my nonna's house. She cooked for more than 15 people. Insalata russa is a staple dish for every important occasion.

These are typical Argentine Christmas Eve dishes too. We call it Vitel Tonné, the name in Piedmontese for Vitello Tonnato.

I thought it was sweet when she confesses that she bought the tuna almost like she was apologizing for it. Although, she uses canned peas. But fresh doesn't have the same texture.

My Russian grandma used to make a “Russian Potato Salad” that was similar to Ida’s salad! Grandma’s had boiled potatoes, carrot, eggs, and peas; she also put pickles (and pickle juice!) and sometimes beets. She also made a mayonnaise type dressing for it. She claimed that it was called “Russian” because they used to put caviar in it.
We called it "Olivier" (Оливье) salad.

Настоящий русский салат и близко не похож на этот. Надо: 3-4 картофелины, сваренных в мундире, 3-4 вареных яйца, консервированный зеленый горошек, 2 вареных моркови, 3-4 соленых огурца (можно маринованных), немного варенного мяса или вареной колбасы. Все порезать кубиком, заправить майонезом. Это любимый салат к новогоднему столу.

Нет такого салата - «русский». В СССР был салат «Оливье» - его придумал французский повар, работавший в ресторане в москве, еще до революции. В салат кладут мелко нарезанный картофель, яйцо, ветчина или вареная курица, соленые огурцы, морковь и зеленый горошек - все заправляют майонезом.
The only thing I can't eat in the one pan is rosemary, my palate is very sensitive to it & it makes all my food taste like pine tree needles
Same, even worse, if eaten with fish, it feels me eating something moldy.
