    I don't know how many different videos I've seen Gennaro cooking gnocchi, but there is a certain charm to each video. I guess when you can see passion, it doesn't get boring.

    Die Nummer steht für den Mineralstoffgehalt. Bei Wikipedia steht, dass die italienische "00" für den wenigsten steht; dies ist dann Typ 405.
    Gennaro benutzt dieses double-zero auch für den Nudelteig. Der funktioniert ganz ausgezeichnet mit dem üblichen 405er (semolina ist übrigens einfach Hartweizengrieß).

    This is very helpful, easy way to recycle your mashed potatoes too! Using rice flour for rolling is a great tip. Want a quick laugh? Turn on the CC feature. For some reason in this video CC are all messed up and come out like that: "Sick that and no risk going to make the fulbright scholar", "you clean your aunt perched on the stage...", "coptic ac islamic jihad no contact" Have fun with that!

      This is because its the auto CC which uses voice recognition. It doesn't work well with accents.

    I love Gennaro and his simple delicious recipes. I think the Cameraman or the director has to tell him to clean and trim his nails since they are using an HD camera. The chef himself might not have noticed it but the powerful HD cameras nowadays are able to capture every single details.

    may i offer a humble tip ?
    i don't have a "ricer"...so as the master of improvising :-)
    i used my Colander and the back of my wooden spoon it works perfect
    also as a secondary tip my pans that i use are not the type with steel handles ... so i wrapped allu foil around the handle to protect it and stop horrid smells from entering my food ...still use a kitchen glove though just in case you burn your hands ...
    Genaro and Jamie pls do a tour live show all over europe ...

    I love how passionate Gennaro is :D and boy ... I hope I find the patience to make this someday soon, it looks SO SO good.
    Quick question, can I freeze it at any stage of prep for later use? I once had a friend tell me she makes big batches and freezes them, but I also have a vague understanding about how potatoes don't handle freezing well? confused :)

    You boil them in water first, until they float, then you can put sauce on or fry in a sage and butter or bake with butter and cheese...or olive oil instead of butter.
