I love Gennaro and his simple delicious recipes. I think the Cameraman or the director has to tell him to clean and trim his nails since they are using an HD camera. The chef himself might not have noticed it but the powerful HD cameras nowadays are able to capture every single details.
may i offer a humble tip ? i don't have a "ricer"...so as the master of improvising :-) i used my Colander and the back of my wooden spoon it works perfect also as a secondary tip my pans that i use are not the type with steel handles ... so i wrapped allu foil around the handle to protect it and stop horrid smells from entering my food ...still use a kitchen glove though just in case you burn your hands ... Genaro and Jamie pls do a tour live show all over europe ...

I once had a friend tell me she makes big batches and freezes them, but I also have a vague understanding about how potatoes don't handle freezing well? confused :)
