@@SPOILER750 your comment is old but feel like responding with an idea that might help.
I'd try to infuse the vanilla in the sugar and water during the boil, and split and scrape the vanilla bean instead of using the whole pod. Doing this instead of letting it soak for 30 days should reduce the plant matter and darkening in the finished product. You'll still have some pepper looking specks but it won't be so bad, like the flecks in vanilla bean ice cream.

IN Florida we Southerners make calamondin liquer almost the same way....but we put vodka, thetiny whole fruit washed cut in half and sugar...leave a month turn every few days , the sugar dissolves and you calamondin liquer...gorgeous flavor can be mixed with water, or clob soda or best in cold or,hot tea the hot tea makes a sore throat feel so much better you actually look forward to a sore throat..or if you are a regular hot tea drinker no excuse NEEDED! WE also make calamondin preserves...a complicated time consuming process so never commercially available way better than orange marmalade. WE have mandarins like tangerines but slightly thicker skins those make fabulous marmalade too cook down to caramelize and it's like candy on your toast. THe best marmalade in the world. HOme made also not commercially available.

You cut the liquor with simple syrup once it’s infused with the lemon. It also mellows if you let it sit and age for a bit. If you start with something lower proof like vodka, when it ages it becomes too sweet and cloying.

I make this lemoncello recipe but with key limes but I use more sugar by a quarter cup because the limes are tart.
I suppose you could do it with any citrus.

Yea homemade distillates are always much sweeter than anything industrial, because the sucrose doesn't completely dissolve with the alcohol. The amount of sugar though it's the same in both.

I've made limoncello in the past for myself and for gifts I loved it but for those that never had it before said it was too strong what a bunch a sissies. I also made it with natural oranges and it tasted delicious if you add heavy cream it is awesome as long as you have it chilled because of the dairy in it.

Nice job. I used everclear grain alcohol or spirytus zbigniew and marinated for a week with the lemon. Some same 30 days some say 3. I also used less sugar. First time was too sweet.I also store in freezer so its nice and cold and ready to go.

You can also slice them and put them on wax paper lined baking sheets in the freezer until they are frozen then put in a ziplock bag! Anytime you need a slice of lemon just pull one out and use it for a drink like ice tea ect...
You can also juice them and freeze the juice in ice cube trays then when frozen pop out and put in a ziplock bag and you have juice cubes ready for when you need them!! 😊
