Hi, I took down the recipe and instructions cause I want to make these doughnuts, and I thought that other people might benefit from me posting it hahaha (easy reference and all that). Ingredients A 1 medium egg (scrambled) 70 cc milk 40g honey Ingredients B 100g rice flour 1 tsp baking powder Ingredients C Add 20g melted butter ---------------- Steps: Whisk Ingredients A together well. Then add in Ingredients B and whisk until the mixture becomes smooth. After that, add Ingredients C and whisk it in. Butter the silicone molds, then pour in the batter. Bake at 180 degrees Celsius for 20 min. Leave to cool, then remove from mulds. ---------------- To make the glaze: Melt 50g powdered sugar, 6g of butter, 2tsp milk and vanilla essence over a bowl of hot water. Dip the donuts in the glaze, then set to drip dry.

The texture is soft and bouncy, though the 'skin' of the doughnut isn't as thick as the Mr Donut one... (I also had to double glaze the doughnuts cause the first time I dipped them, there were bubble holes)
+Uyen Nguyen hmm I'd think using regular rice flour wouldn't give you bouncy donuts though! It might just end up flat (but do post your results if you try with non-glutinous rice flour!!). I know daiso sells shiratamako, and Asian marts in your area might stock it too! The daiso packaging has 白玉粉 (しらたまこ) on the front!

I made these with Mochiko, subbed milk with almond milk, and used a syrup i made from brown sugar instead of honey and it turned out great! I also used mini bundt pans to get a donut like shape. If you want the outside to be a bit crunchy, t you can take the donuts out of the molds and put them back in the oven by themselves to let the tops brown, but make sure to be careful because it might get a bit dry.
i tried making these with mochiko but the texture was super mochi-like/wet-ish and it didn't look spongey like it does in the video ... should i have used normal rice flour? glutinous? mixed? :/ ill try again when i get more butter ..
The regular Japanese rice flour is made out of short grain rice (sushi rice), so the final product obtained from it will have some chewiness, but not as much as if it was made with glutinous rice flour. If we use our common rice flour, the donuts won't be chewy at all. Maybe a combination of flours will do the trick if you cannot get ahold of Japanese komeko.
Hi this might be late but, just to let you know, rice and rice flour are completely different things. Rice flour is used to make desserts for mochi, and other Japanese goods
Coco LovesBears I don't live in the U.S so I don't know where you can get the molds, you probably can find it in daiso or any japanese owned shops. As for the chocolate, there's a tutorial for matcha chocolate on youtube, you can search it.

Neither, it's flour made from non glutinous japanese rice, which is stickier than regular rice but not the same as glutinous rice.

I am in Canada and in my area we have no Daiso and the dollarstore does not carry that kind of item... I've looked :)
