Kitchri Ingredients:
3 1/2 Cup Basmati Rice (washed and soaked for 3 to 4 hours)
1 1/2 Cup Tuvaar Daal (Pigeon Pea Lentils)
4 Medium Onions Sliced (2 are optional for garnish)
Half Tablespoon Cumin Seeds
2 Elaichi (Cardamom) Pods
1 Cinnamon Stick
Lavang (Cloves)
1/3 Cup Ghee (Clarified Butter)
3 and Half Tablespoon Salt
Half Tablespoon Turmeric Powder

Gulcoo (Courgette Curry):
800g Courgette Chopped
2 Tablespoon Coriander Powder
2 Tablespoon Cumin Powder
2 Tablespoon Red Chilli Powder
Half Tablespoon Salt
1 Teaspoon Haldi (Turmeric) Powder
Quarter Cup Garlic, Green Chilli and Coriander Paste
Quarter Cup Ginger and Garlic Paste
1 Cup of Tomato Cooked
Half Cup of Sunflower Oil
Quarter Cup of Fresh Chopped Coriander

Tomato Chutney Ingredients:
2 Cups Cooked Tomato
1 Tablespoon Garlic and Ginger Paste
1 Tablespoon Coriander, Garlic and Green Chilli Paste
Half Tablespoon Coriander Powder
Half Tablespoon Cumin Powder
Half Teaspoon Red Chilli Powder
1 Teaspoon Salt
1 Teaspoon Turmeric (Haldi) Powder
Quarter Cup of Sunflower Oil
Quarter Cup Chopped Coriander

Curry:
Yoghurt
Half Tablespoon Salt
Half Tablespoon Haldi (Turmeric) Powder
Half Tablespoon Cumin Powder
Half Teaspoon Red Chilli powder
2 Tablespoon Garlic and Ginger Paste
2 Tablespoon Garlic, Chilli and Coriander Paste
Curry Leaves
2 Bullet Chillies
1/3 Cup and 1 Tablespoon Besan (Chickpea) Flour
2 Handfuls of Coriander
1/3 Cup Ghee (Clarified Butter)
4 Cups Water
1 Tablespoon Cumin Seeds
1 Tablespoon Ajwain (Carom) Seeds

Kitchri Method:
1. Heat Ghee and Spices:
• Add ghee to a pot and heat on high. Once hot, add jeera seeds and whole masala.
• Cook until the spices are browned.
2. Cook Onions:
• Add onions to the pot and cook until they are lightly browned.
3. Boil Water:
• Add 8 cups of boiling water to the pot and bring it to a boil.
4. Cook Lentils:
• Add the lentils to the pot. Cover and cook until the lentils break easily but are still firm.
5. Add Rice and Seasonings:
• Add salt, turmeric, and rice to the pot. Pour in an additional 1.5 cups of water.
• Taste the water and adjust salt if needed. Mix thoroughly and cover the pot.
6. Cook Rice:
• When the water evaporates, the rice should be cooked.
• On gas mark 4, cook the rice for approximately 45 minutes.
Optional Garnish:
1. Fry Onions:
• In a separate pan, add a little ghee and heat.
• Add 2 medium sliced onions and fry until they are brown.
• Use these fried onions to garnish the rice before serving.
Gulcoo Method:
1. Heat Oil and Cook Pastes:
• Turn the heat to high and add oil to a pot.
• Add the pastes to the pot and cook until aromatic.
2. Add Dry Masala:
• Stir in the dry masala and cook until the oil rises to the top.
3. Add Tomatoes:
• Add the cooked tomatoes to the pan and stir thoroughly. Cook until the oil separates and rises to the top.
4. Cook Courgettes:
• Lower the heat and add the courgettes and fresh coriander.
• Pour in half a cup of water, cover the pot with a lid, and increase the heat to high.
5. Simmer and Cook:
• Once the mixture comes to a boil, reduce the heat to low and let the courgettes cook until tender.
• Add water as needed to prevent the masala from burning.
Tomato Chutney Method:
1. Heat Oil and Cook Pastes:
• Turn the heat to high and add oil to the pot.
• Add the pastes and dry masalas to the pot.
• Add a little water to prevent the masala from burning.
2. Stir and Cook:
• Reduce the heat to medium-high and stir thoroughly.
• Cook the mixture until well combined and aromatic.
3. Add Tomato Paste:
• Add the cooked tomato paste to the pot and stir thoroughly.
4. Cook with Coriander:
• Add chopped coriander to the pot.
• Continue to cook until the oil rises to the top.
Curry Method:
1. Prepare Yoghurt Mixture:
• In a pan, add half a tub of yoghurt.
• Add pastes, besan flour, coriander, salt, and chili to the yoghurt.
2. Blend Ingredients:
• Add 4 cups of water to the yoghurt mixture and blend thoroughly until smooth.
3. Cook Yoghurt Mixture:
• Add turmeric to the pan.
• Cook on high heat, stirring continuously to prevent the mixture from splitting.
• Continue cooking until the mixture rises, then turn off the heat.
4. Prepare Tempering:
• In a separate pan, brown the seeds.
• Add ghee, bullet chillies, and curry leaves to the pan.
• Reduce the heat to low and cook until the chillies and curry leaves are browned.
5. Combine and Finish:
• Add the browned chillies and curry leaves mixture to the cooked curry.
• Cover the pot with a lid to allow the flavors to meld.
