So, BWB accidentally created a Korean classic. My mom used to make a thing we called Saturday Morning Special every weekend. Leftover rice, Velveeta and chopped kimchi. Melt Velveeta, add kimchi and rice and combine until everything is hot. It's so comforting. Toss in hot dogs if you want to make it fancy.
This looks amazing! I live in Korea, and some things I love here are kimchi jjigae, kimchi fried rice and dubu kimchi, among other kimchi dishes. The common thread with all of those is cooked kimchi. I would fry the kimchi before throwing it in the cheese. It’s a game changer. I can get fried kimchi at the store here and I put that in Mac and cheese and its’s like it’s from another planet where I know how to make delicious things. Do it Babsy! Fry that kimchi first!!!
I'm Korean, born and raised but sadly, I can't eat uncooked kimchi. Why? I don't know but I just can't eat something cold and somewhat brine-y. But cooked kimchi? Fried in oil? All day, everyday 😋

This ended up very similar to an Austin restaurant chain called Chi'lantro. Their signature dish is their kimchi fries, which are topped with caramelized kimchi, queso, and Korean BBQ. They're a local favorite, and rightfully so imo.
Local food truck did a kimchi cheese fry thing years ago. Owner took a job with a local company to do work in their kitchen around the start of the lockdowns. I just learned the owner is getting a new truck and I hope the kimchi fries make a come back.
Honestly I should get frozen fries more often. The hardest part is getting potatos prepped and it'd be nice to just be able to toss them ready to go into some oil. :D Great fun dish. Easy enough to put together. I might try mine with some costco shredded rotisserie chicken in a gochujang sauce or something!
Frozen can never hold a candle to fresh BUT I find fries to be one of the best frozen food items to eat, so versatile too. Eat them up as is, use them as a side, or mix them (like bab) into something. The seasoned ones especially? Yummmmmm

There's a ramen place I go to called Rayaki and one of their appetizers are "Rayaki Fries', which are waffle fries topped with chasu, spicy mayo, garlic aioli, onions, masago, and scallions and I can only imagine that these are as -if not more- delicious.
I described this to my Korean mother-in-law, and I know just enough Korean to understand the profanity in what she had to say about it. Anyways, definitely trying this one! And with homemade kimchi. 😁
Cilantro/coriander soapiness is a due to the turpine linalool. Turpines are classified as volatile organic compounds, or VOCs. This is why cooked coriander doesn't taste soapy, because the linalool decomposes with the heat
So I usually watch all these extra shows outside of the recipe videos because it's fantastic entertainment, but this look SO SO amazing I am planning this one for dinner asap

I use sweet potato fries (straight cut and waffle) as basically the way to easily throw some starch under sauteed veggies.
