    I learned during the lockdown that you can save the bottom 1 inch of the green onions and prop them up in a glass with a little bit of water and you will have more green onions in just a few days!!!! Not a lot but enough for a garnish !! Such a good trick …the same thing with celery.Put it in the sauce or with someone or a little sprouts a little celery and leaves probably not a giant crunchy stock but you get some small pieces and leaves in a recipe for that good celery taste!

    I did a 3 day menu for $9.98. Ingredients from WM with all GV items: sausage 1.94, cheese block 1.74, spaghetti sauce .82, french bread $1, tuna .68, 1 lb rice .72, froz mix veg .84, cream of mushroom soup .78, spaghetti .82, tomato paste .48. Total $9.98. 1st meal: French bread pizza using the bread cut in slices, 1/2 the sausage, 1/2 the cheese shredded, 1/2 the spaghetti sauce. 2nd meal: Tuna rice casserole using the rice, mix veg, tuna, and cream of mushroom soup. 3rd meal: Spaghetti using the spaghetti, 1/2 the spaghetti sauce mixed with the tomato paste and water to consistency, 1/2 the sausage and top with the rest of the cheese shredded. It's not gourmet or glamorous but it's tasty and doable. There should be plenty of food. Great video Michelle

    Porcupine Meatballs was a staple of my grandmother's. It's a depression Era recipe similar to these in that it's a rice dish. She always used ground beef but you could definitely substitute ground turkey. It's main components are beef, rice, an egg and a can of tomato soup. Seasoning and condiments are Worcestershire sauce, garlic powder, and onion powder. One of my favorites and cheap to make!

    Stuffed bell peppers with rice, ground beef or sausage, onion, garlic and tomato sauce all mixed together. Stuffed into halved bell peppers and topped with a piece of raw bacon. Bake in oven at 350 degrees until peppers are crisp tender and bacon cooked. I sometimes use my spaghetti sauce after making spaghetti ( what is left) and add cooked rice to it. This way is already seasoned. Then continue with other preparations of the dish. I have also added small bits of corn and Petite Poise Peas to rice mixture. All depends upon what you like.

    • @ArdentMichelle

      I thought about doing stuffed peppers but I couldn't make it work in the $3 dollar range but I could definitely fit it into one of my regular meals or maybe even a $5 dinner. Prices from my local store as of today: white rice = .08/serving, Dry Pintos = .08/serving, Frozen Peppers = .25/serving, Corn tortilla = .17/serving (2.5 ea.), Shredded cheese = .31/serving. Add pantry spices and make a tex/mex casserole for about .90 per serving. Not tons of food, but on budget and delicious, as well as filling.

    Awesome video! Brown sugar works very well in the Bulgogi.
    I like to brown a lb of ground turkey with the pepper/onion mix from DT, add in a can of drained corn and a can of rinsed black beans, and a can of tomatoes with green chile (undrained). Season to taste. Serve over rice with salsa and shredded cheese if you have it. Very tasty and filling! I’ve made it for around $5 for 4 adults.

    One thing that you could do for a challenge would be to sprout some of your own alfalfa or pea sprouts to add more greenery to a meal. Once you buy the seeds it’s very inexpensive and you get a whole mason jar full. I would think that some version of pasta marinara with TVP protein would come in at under $4?

    If you want to try the turkey sausage....look for a recipe with eggroll in a bowl. you can find a bag of coleslaw mix priced to get you within the range. Soy, sesame oil, onion, garlic, etc. with rice. Makes a ton but I usually only use a half pound of sausage as I think its a little over powering.

    Bulgogi is a staple in our house and broccoli is a necessity for me. To make it low carb i do cauliflower rice and everyone likes it either way. There are never leftovers LOL.
    For budget meals in other nationalities i only buy meat under $2 a pound and freeze it. I try to do at least 1 if not 2 meatless meals a week. Also, 1 if not 2 days of leftovers a week. I try to make them into something different if I can.
    Meat substitutes I use are frozen mushrooms $2, and mince them up, or lentils $1. Lentil tacos, lentil taco soup, lentil burrito bowls etc.
    Mushrooms in spaghetti sauce blended to hide them mua ha ha 😆 mushrooms in rice casseroles.
    Canned chicken and tuna are good for pasta, soups, and casseroles. Petite pasta bags in the latin section are about .30 and are great for soups such as italian minestrone.
    I hope those help.

I haven't been to a Big Lots in a while. I would have purchased quite a few of those at .75. We are a soy sauce lovin family 😂 Happy New Year and thanks for dropping me a line.

      Hi Victoria 😁 You're welcome. I'm glad you like this video. Hmm....I haven't tried Tamari yet. I use the low sodium Kikkoman soy sauce which looks to have less than the low sodium Tamari, but I would still like to try the Tamari-especially if it's a good substitute for Worcestershire sauce. Curious how it tastes. Since I have been reducing my sodium I've been trying to avoid soy sauce altogether, but I do miss it. It was one of my favorite condiments. 😞

    The Aldi ground turkey doesn’t taste anything different than the regular ground turkey anywhere else! Definitely, I would say loaded stuffed baked potatoes can go along way and it’s a super cheap meal wouldn’t be under three dollars for the whole family but would be a very cheap meal that could fill you up very quickly

  • @uweschroeder
    @uweschroeder 2 роки тому +3

    If you want to do under $4 italian or spanish recipes, a risotto or paella style recipe will work nicely. You could do both with ground turkey, not exactly traditional but who cares. For paella, which is usually considered a seafood dish, it actually isn't. It originated in the Valencia region of Spain and originally did not have any seafood because that region is land-locked. They used rabbit and snails as protein - or whatever they could find/hunt in the orchards. It was the orchard worker food. All you need is any type of short grain rice (Calrose, Sushi, Arborio - just short grain) and when I go camping to remote places I use canned chicken or those hawaiian brand cheap chorizo type sausages as protein. Throw in some of your dollar store pepper stir fry mix, some onion and you're golden. You can even just make it vegetarian and omit the protein altogether (just don't substitute beans because then you end up with something like Gallo Pinta - which would also be a under $4 dish)
    Risotto goes without protein, all you need is some cheese which is a expensive ingredient. I think you could substitute that dried parmesan stuff from the dollar store in a pinch and it would still be a decent meal. Of course some fresh asagio or romano would be better. You can add frozen veggies like peas or aspargus and it's a quite good meal.

      I love this Uwe. 🤔I always learn something from your posts 😊 What kind of seasonings are you thinking of with these dishes? I love risotto (truffle is my fav) but I haven't tried to make it yet. I've heard its very difficult to master well. ☹️

    • @uweschroeder
      @uweschroeder 2 роки тому +4

      @@ArdentMichelle The trick with Risotto is to stay with it. You have the pan with the risotto and a second pot with hot broth. You only ladle as much liquid in as it takes to keep the rice just barely covered. What you want is that simmering rice to rub on each other. That's what creates the starches that it takes to thicken the entire dish ad make it creamy. It's not complicated, it's just monitoring and attention plus a little stirring. Paella is the complete different. It's essentially the same dish give some ingredients but it's the preparation that's different. When you want to attend the risotto and carefully stir it, you use 2 to 1 ratio water to rice in paella, add all the seasonings and veggies/protein at once and once combined stop stirring. Paella is supposed to generate a crisp bottom because you don't stir it where risotto is supposed to be taken off the heat and stirred before any crisp bottom happens. With Paella you add your additional ingredients in the beginning, where with risotto you add pre-cooked additions like vegetables or mushrooms at the end before serving. Essentially the same dish, just the preparation method makes them completely different.
      As for seasonings: little. A hearty broth (cubes ok, just go heavy)/ For paella saffron or turmeric is a must, for risotto maybe some herbs like oregano.

      @@jeannehunter5344 Just don't use slugs - trust me, I tried them alive (involuntarily - long story) and cooked and neither works at all. Keep the snails with a large house, not the little ones and throw them into a bucket with very salty water first. That gets rid of the slime stuff plus it kills them and then you can rinse them and i.e. throw them into a paella or roast them in the oven and eat them with garlic compound butter and toast.

      Thank you for your thoughtful critique and bringing this awareness to my attention. I should clarify that I live only a few hours from the Mexican border, so the food in my area is heavily influenced by this regional cuisine. I am much less familiar with Latin food from other countries. I think the same could be said for Asian food. We classify it as either Korean, Chinese, Japanese, Thai, etc. and it is based on the region that it originated from, but if we were to say I love Asian food, well that would incorporate a LOT of different kinds of cuisines and it would be less decisive. I will say that I would love to learn about more Latin and Hispanic inspired dishes! Thank you for watching my videos! 😁
