You could've made a cream of carrot soup by using your pasta water to cook the cut up carrots, bullion and your immersion blender.. I have been using and freezing my pasta water for so many other dishes. I even thickened my beans with it. It didn't change the taste at all.
You are so inspiring. I am amazed at what you do with $5. When you were frying the pasta, it made me think of a spaghetti pie I have made a lot. Mix some egg (and Parm cheese if you have it) with the cooked pasta as the bottom layer, then onion/sour cream ( or plain yogurt) as 2nd layer, then protein + sauce (and cheese) on top, and bake about 30 min. I make it meatless most of the time. In this scenario, could just do the two simple layers and skip the dairy. I am definitely trying some of your ideas!
I have found that adding a bit of instant coffee or even leftover cooked coffee to my chili/beans adds a depth of flavor. A bit of chocolate and/cinnamon enhances the flavor too. I have been experimenting with more flavors because of you. 😋
I use cinnamon in my chili too, it adds a lot of depth to it. Haven't thought about coffee, I make chili quite a bit during fall and winter, I'll add a little coffee next time.
Lately I've been adding a bit of the powdered dark baking cocoa to my canned chili, that and this lovely Korean Got Chu hot sauce and what an improvement it is, yum!
I think the reason the pricing is higher online is that the website is assuming you're placing an order for pickup, which means staff have to assemble, bag, and deliver your order to you. I honestly like that it's a little higher, because I usually spend a decent amount less once I am in store and can snag a few extra items with the savings sometimes!
Yes, last time I got online shopping was because my dog had been very ill and just come home from the emergency clinic and I didn’t want to leave him. And the person who delivered my food, put the receipt in the bag and it was so much cheaper than what I had to pay. I don’t mean just the services fee or the delivery fee either. On the breakdown it said that the base amount for the groceries was $100 but the receipt said $90 and when I contacted customer service they said it was because the store charges more for them if you buy them online

My parents were 18 and 21 when they got married and had little money to feed us kids. We grew up on a lot of cold macaroni salad with hard boiled eggs, tuna, and celery. We live a blessed life but we always rotate in cold pasta salads for lunches since my family are volume eaters and they stretch. I saw your ingredients of pasta and eggs and thought of that meal right away ❤

I periodically calculate these low-cost challenges with my shopping at Safeway online. I am disabled so I do all my shopping online. This time I matched all items for a total of $16.21 including all my discounts. I was able to add a little excitement with this one because I could get seasoned versions for the same price -- a little more flavor without buying expensive seasonings. I love watching these challenges -- so creative with so little, and I'm sure tasty.
Those white breads and pasta are made w enriched flour so really have a lot of food value. I recall someone I knew years ago, used to add some bread to chili beans as a thickener,; after cooked, could not tell there was bread in there but the chili was thicker.I like the therapeutic part of the food too :) You have enough food left nearly for another two days. Amazing!
I'm always amazed at the different meals you get from the same couple items that make it seem like you're not eating the same thing every day. Portions seem to be small but hey, something's better than nothing. Never know when we might be in that situation someday.
Cheesecake Factory! YUM!!! Girl, you are so creative! Black bean burgers are soooo good and so economical to make. When I made mine a while back, I'd break up the burgers into pieces and added it to salads and soups. Try it with tacos! All kinds of things you can do with black bean burgers!
I've been a vegetarian for 20+ years and have cookbooks dedicated to veggie burgers. All that said, it's never been suggested to dry the beans out first, but it seems like such a good idea because I hate mushy burgers! For thicker veggie burgers, it does help to pan fry them and then bake them for 15 minutes or so to prevent mush.
Well Kenji Lopez is brilliant so I have to give him the credit. 😂 Just got his new cookbook The Food Lab, which was a James Beard Book Award Winner. He's got lots of great ideas!

Your fried pasta reminded me of a meal that I would make for my now grown kids. Saute onion and cabbage, put in cooked pasta and saute, and then add beaten eggs tossed over everything. The heat of the ingredients will cook the egg. You can then add cheese (any kind) shredded on top if you have it (or not!).
I’ve never thought to dry out my beans for a black bean burger, I’ll have to try that next time I make a batch! The meals were so creative and looked delicious as always. I’ve never actually been to the cheesecake factory, but I love to buy their brown bread when it’s on markdown at my grocery store, so I’d recognize it anywhere!

This was a really great video! Very creative! I season and saute plain leftover pasta pretty much the same way you do at the end - but then I pour over a couple of beaten eggs to make it into a frittata type dish. It is especially good with scrappy veggies/meats added-in and topped with a little melted, shredded Parmesan cheese.
I was actually thinking about a frittata, which I think would have been the best use of ingredients and nutrition, but I do a lot of them so I decided not to. Love the idea of adding in Parmesan.
You probably already know this and I know it would use a fair amount of oil, so might not be in the spirit of the challenge, but you can make mayo from the black bean gloop in the same way as you use chick pea juice. Its a bit lavender coloured (and pinto bean gloop makes shell pink mayo) but all legume gloop works.I freeze it if I dont need it straight away. Saves an egg for something else and cheaper than buying a jar!
@lincdog2269 the thick, gooey liquid you get in a can of beans, or when you cook them yourself. It acts as a replacement for the egg you would normally use yo make mayo

i know this may sound a bit strange, but my husband and I eat carrot dogs and you had all the ingredients to make those too. A small amount of chili, the bread for the bun and then the carrots. I steam the carrots. It is our version of a hot dog and we eat them as such, sometimes with mustard and ketchup, sometimes with chili, and then sometimes we add relish or sauerkraut. @@ArdentMichelle
I thought carrot dogs was the strangest thing I had ever heard 😂 But since I use a lot of roasted carrots anyway, I made one. A little bit of honey mustard and finely chopped onion later, and I am a fan 👍
This was an extra-interesting video because of the timing - we're all getting ready for Feast Day, and many of us are spending more at the store than typical. I love that you are considerate of other shoppers when video taping. I hate the idea of being in public and people constantly taping then showing you on their own UA-cam channel without consideration for your privacy. Yes it's public space, but people don't go to the store expecting to star in someone's UA-cam video.
Interesting recipes! Never succeeded in making a good bean burger. Drying the beans out first is so clever! Will try that. And the breakfast looked delicious. I've would have made a frittata on the last one, just fry the pasta like you did and 2 beaten eggs. Yum! I sometimes use carrots on salad like you did, it's really good! Just peel a few steokes with a potato peeler.
I thought about frittata but I make that one so frequently. Probably would have been the best nutrition wise, because it would have been adding more protein in.
Out of what you have - cook pasta, put on a skillet with some oil, pour in a couple of beaten eggs, fry with a cover on. In the end add some sugar on top. A sweet breakfast.
I meant to say, thank you for your direct uncomplicated carrot cake recipe, I usually have a great deal of difficulty with any results, however I tried this, double and then adding a tiny portion of sun raisins from an Aldi box, baking in a glass dish available while staying with family (grr) and it was wonderful!
For the morrocan carrots recepy it is a side dish, to do it you dice carrots as cube you boile them in water until there are a little soft and then strain the water keep a little for flavor,then add salt cumin and a little pepper chopped coriander percil and mashed garlic ,frie it with a little bit of olive oil it is a delight

For the pasta packs make Mexican sopa. Brown the pasta, add water, a little tomato sauce, chicken bouillon, optional dash of cumin. Cover and simmer on very low for 15 min. You can add beans, left over chicken, left over taco meat, veggies like carrots and potatoes.

I have been making frittatas since watching your videos. I freeze left over meat & veggies on individual bags & add eggs, cheese & some fresh veggies when I make a frittata!!
Macaroni pie is an italian must👍yes add cut up mozzarella provelone salami ham 3 eggs into cooked pasta blend it fry it up on one side then flip or put in oven

Growing up...my father's favorite go-to recipe that he would suggest when his mother asked him what she should make...."ma...just fry up the left over pasta" Back story....we're Italian/Ozone Pk NY!.......he grew up in the 30's during the depression and his mother (my nana) would slice up onion and fry up the left over pasta (no sauce)....and there is nothing better than getting a bite of the golden crispy areas plus the sweet carmelized onions....he luv"d it with a little ketchup (he was a kid!) but whip up a couple of eggs for a frittata (best way to clean up any left overs!) Options are endless....Love your videos!

All the stores prices online are more than if you go in the store and get it yourself. They are just a few cents higher but it helps compensate for the people they have shopping for you.

I made very similar veggie burgers today and they turned out amazing. I’m definitely going to do this in a larger batch and freeze. I had a dried chipotle that I cooked the beans in and it added so much flavor!! Thanks for the idea!
have you tried a mini low country boil? 1 serving may be 1 boiled egg, 2 egg sized red potatoes and maybe 5 or 6 pieces of medium sized shrimp. season with butter and garlic and any other seasonings you like. I moved from Florida to Ohio and miss going to the seafood shops and ordering a to-go shrimp platter so I started making my own.
great recipe ideas. i am needing some extreme budget ideas and i'm going to be making these. i think the fried macaroni would make a good pizza base. i have some pasta and some butternut squash that i think i'll make a sauce with and then add some veggies to the top.

Your fried macaroni came to mind a couple of weeks ago when I was boiling the pasta for a macaroni salad, and I let it overcook. In days gone by, I would've just thrown it in the compost because I can't stand it overcooked. However, because of this video, I decided to try it fried. I did add a little bit of chopped onion to the garlic, then when it was almost crisp, grated some parmesan on it. Final touch was a squeeze of lemon juice. It was so good I'm going to make it again (hopefully without overcooking the pasta next time.)
Our local Aldi said that the elevated price is for online grocery shopping. Just doesn't include tip and or delivery. This was a really good menu for what you found 👍👍🍽️ do this video again maybe at different stores with the same budget ❤

I use the crushed up crumbs from our corn chip bags to thicken chili. Works great and reduces waste.

I season and saute plain leftover pasta pretty much the same way you do at the end - but then I pour over a couple of beaten eggs to make it into a frittata type dish. It is especially good with scrappy veggies/meats added-in and topped with a little melted, shredded Parmesan cheese.

I was actually thinking about a frittata, which I think would have been the best use of ingredients and nutrition, but I do a lot of them so I decided not to. Love the idea of adding in Parmesan.
I like carrot salad with raisens, pineapple, black pepper, salt, and a little mayo. Yum!
I've had it with whipped topping but not with mayo. Bet that's good 👍

You probably already know this and I know it would use a fair amount of oil, so might not be in the spirit of the challenge, but you can make mayo from the black bean gloop in the same way as you use chick pea juice. Its a bit lavender coloured (and pinto bean gloop makes shell pink mayo) but all legume gloop works.I freeze it if I dont need it straight away. Saves an egg for something else and cheaper than buying a jar!

i know this may sound a bit strange, but my husband and I eat carrot dogs and you had all the ingredients to make those too. A small amount of chili, the bread for the bun and then the carrots. I can't believe everything that you made with the ingredients that you had. I think I will have to try the black bean burgers. Thanks for another inspiring video. See you next time.
Are you boiling your carrots until soft or eating them raw?
I steam the carrots. It is our version of a hot dog and we eat them as such, sometimes with mustard and ketchup, sometimes with chili, and then sometimes we add relish or sauerkraut. @@ArdentMichelle

I thought carrot dogs was the strangest thing I had ever heard 😂 But since I use a lot of roasted carrots anyway, I made one. A little bit of honey mustard and finely chopped onion later, and I am a fan 👍

This was an extra-interesting video because of the timing - we're all getting ready for Feast Day, and many of us are spending more at the store than typical. It's good to save as much as we can at the stores prior to the holiday extras, plus it helps keep the food intake under control by default, so a double win, Thanks for the inspo!

Some Mexican grocery stores sell rice and beans loose per pound. Winco sells spices cheap. They sell a lot unpackaged you can buy per pound
yes, I've done some challenges at those stores. Excellent prices on beans and other items like dried peppers.

I love that you are considerate of other shoppers when video taping. I hate the idea of being in public and people constantly taping then showing you on their own UA-cam channel without consideration for your privacy. Yes it's public space, but people don't go to the store expecting to star in someone's UA-cam video.

Interesting recipes! Never succeeded in making a good bean burger. Drying the beans out first is so clever! Will try that. And the breakfast looked delicious. I've would have made a frittata on the last one, just fry the pasta like you did and 2 beaten eggs. Yum! I sometimes use carrots on salad like you did, it's really good! Just peel a few steokes with a potato peeler.
I thought about frittata but I make that one so frequently. Probably would have been the best nutrition wise, because it would have been adding more protein in.
Wouldn't have been in the budget for this challenge, but I have used silken tofu as a binder for bean or lentil burgers before and it works very well.

Out of what you have - cook pasta, put on a skillet with some oil, pour in a couple of beaten eggs, fry with a cover on. In the end add some sugar on top. A sweet breakfast.

I meant to say, thank you for your direct uncomplicated carrot cake recipe, I usually have a great deal of difficulty with any results, however I tried this, double and then adding a tiny portion of sun raisins from an Aldi box, baking in a glass dish available while staying with family (grr) and it was wonderful!

For the morrocan carrots recepy it is a side dish, to do it you dice carrots as cube you boile them in water until there are a little soft and then strain the water keep a little for flavor,then add salt cumin and a little pepper chopped coriander percil and mashed garlic ,frie it with a little bit of olive oil it is a delight

Awesome! I made the black bean burgers for dinner. I added some crushed hickory nuts and feta. I will never buy frozen veggie burgers again. I am making the banana stuffed bread tomorrow. For the pasta packs make Mexican sopa. Brown the pasta, add water, a little tomato sauce, chicken bouillon, optional dash of cumin. Cover and simmer on very low for 15 min. You can add beans, left over chicken, left over taco meat, veggies like carrots and potatoes.

My compliments on how you were able to eat a lot and tasty food for little. I have to make do with a small budget as a single mom and the bean burgers are also a favorite here. I often add crumbled salted pretzels. That also makes the burger very tasty. Thanks for sharing.

Growing up...my father's favorite go-to recipe that he would suggest when his mother asked him what she should make...."ma...just fry up the left over pasta" Back story....we're Italian/Ozone Pk NY!.......he grew up in the 30's during the depression and his mother (my nana) would slice up onion and fry up the left over pasta (no sauce)....and there is nothing better than getting a bite of the golden crispy areas plus the sweet carmelized onions....he luv"d it with a little ketchup (he was a kid!) but whip up a couple of eggs for a frittata (best way to clean up any left overs!) Options are endless....Love your videos!

have you tried a mini low country boil? 1 serving may be 1 boiled egg, 2 egg sized red potatoes and maybe 5 or 6 pieces of medium sized shrimp. season with butter and garlic and any other seasonings you like. I moved from Florida to Ohio and miss going to the seafood shops and ordering a to-go shrimp platter so I started making my own.
I don't eat shrimp but would love to include it somehow on my channel. Thanks for sharing this!

Your fried macaroni came to mind a couple of weeks ago when I was boiling the pasta for a macaroni salad, and I let it overcook. In days gone by, I would've just thrown it in the compost because I can't stand it overcooked. However, because of this video, I decided to try it fried. I did add a little bit of chopped onion to the garlic, then when it was almost crisp, grated some parmesan on it. Final touch was a squeeze of lemon juice. It was so good I'm going to make it again (hopefully without overcooking the pasta next time.)

Our local Aldi said that the elevated price is for online grocery shopping. Just doesn't include tip and or delivery. This was a really good menu for what you found 👍👍🍽️ do this video again maybe at different stores with the same budget ❤
